Ingredients You’ll Need
You only need a handful of pantry staples to make these overnight oats:
- Old fashioned oats
- Milk
- Greek yogurt
- Brown sugar
- Molasses
- Ground cinnamon
- Ground ginger
- Chopped pecans or crushed gingerbread cookies
Note: I used vanilla Greek yogurt because that’s what I always keep on hand, but plain works just fine too — especially since there’s already sweetness from the brown sugar and molasses.

How to Make Gingerbread Overnight Oats
This couldn’t be easier.
- Combine all ingredients in a bowl or jar and stir until well mixed.
- Transfer to a container (or divide between jars) and sprinkle with chopped pecans or crushed gingerbread cookies if using.
- Cover and refrigerate overnight.
That’s it! No stove, no mess, no stress.

How to Serve Overnight Oats
These oats are delicious cold, straight from the fridge — but my favorite way to eat them is to warm them slightly in the microwave. Just 30–60 seconds takes the chill off and really brings out that gingerbread flavor.
You can also top them with:

Ingredients
- 1 cup old fashioned oats
- 1 cup milk*
- ⅔ cup Greek yogurt
- 1 tablespoon brown sugar
- 2 teaspoons molasses
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon vanilla (skip if you use vanilla flavored yogurt)
- chopped pecans or crushed gingerbread cookies (optional)
Instructions
- Combine all ingredients in a bowl or jar and stir until well mixed.
- Pour into a jar or container and top with chopped pecans or crushed cookies if desired.
- Cover and refrigerate overnight.
- Enjoy cold, or warm in the microwave for about 30 seconds before serving.
Notes
Greek yogurt adds protein and creaminess but is optional. Any milk may be substituted. Molasses gives these oats their gingerbread flavor. Serve cold or warm slightly before eating. Store in the refrigerator for up to 3–4 days.
