Chocolate Peppermint Cookie Ingredients
- Cocoa powder – Unsweetened.
- Sugar – Granulated.
- Butter – Melted. I prefer salted butter, but you can use unsalted.
- Oil – Vegetable oil (my preference is olive oil).
- Egg – Large
- Vanilla – Real vanilla extract (not imitation).
- Flour – All purpose white flour.
- Baking powder – For leavening; make sure it’s baking powder not soda.
- Salt – If you use salted butter, cut this by half or omit completely.
- Vanilla almond bark – You can also use peppermint or candy cane melting wafers if you want a double hit of peppermint flavor.
- Peppermint candy – Crushed. You can use starlight peppermints or candy canes.

⭐ First, in a large mixing bowl combine cocoa powder, white sugar, butter and oil. Beat in egg and vanilla until well combined.
⭐ Next, stir in flour, baking powder, and salt until a thick dough forms. Place scoops of dough onto a lined cookie sheet.
⭐ Then, bake until just cooked through. Cool on a wire rack.
⭐ Finally, while cookies are cooling melt almond bark. Dip cooled cookies in melted bark and sprinkle with crushed peppermints.

Yes, you can make them a few days ahead. It’s up to you whether to dip and then store or store then dip. They will keep for several days at room temperature or longer if frozen.

We used a standard 100% cacao cocoa powder for the pictured cookies, but you could use a dark cocoa powder if you want them to pack a bigger chocolate punch.
Can you add chocolate chips?
For sure! Sometimes we’ll add a half cup of mini semi-sweet chocolate chip morsels to the dough. So yummy!

Chocolate Peppermint Cookies
Ingredients
- ½ cup unsweetened cocoa powder
- 1 cup white granulated sugar
- ½ cup melted butter
- 3 tablespoons vegetable oil we like olive oil
- 1 egg large
- 2 teaspoons real vanilla extract
- 1 ⅓ cups all purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt halve or skip if using salted butter
- 12 ounces vanilla almond bark
- 12 starlight peppermints, crushed or leftover candy canes
Instructions
- In a large mixing bowl combine cocoa powder, sugar, butter and oil. Beat in egg and vanilla until well combined. Stir in the flour, baking powder, and salt until a thick dough forms.
- Use a 2 tablespoon scoop to make dough balls and place evenly on a parchment or silicone lined baking sheet. (Should make about 16 cookies). Bake at 350F for 10-12 minutes.
- Allow cookies to cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
- While cookies are cooling, melt the almond bark in a microwave safe bowl in 20 second increments, stirring in-between, until melted and smooth. Alternatively, melt in a saucepan on the stove top over low heat, stirring constantly.
- Dip each cookie halfway into the melted almond bark and immediately sprinkle with crushed peppermint. Place on parchment to set.
