We’ve talked about my recent obsession with making salad dressings and marinades, right? So when I put together this Fig & Blue Cheese Salad and went rifling through the pantry for dressing ingredients, I decided to mix things up a little. Rather than my usual mayo or olive oil base, we’re kicking it up a notch with rendered bacon drippings.
Please don’t turn away or cringe! It’s not heavy or greasy, I promise. Just the right amount of delicious bacon flavor with some tangy dijon mustard and a hint of sweet maple syrup. Only three ingredients (yes, seriously!) but this Bacon Maple Dijon dressing absolutely sings!
If you’re vegetarian, don’t keep bacon drippings (why???), or just can’t bring yourself to try this glorious combination, I begrudgingly give you permission to substitute olive oil. But know that this makes mankind sad. And an angel probably lost a wing or got a papercut or something.

Bacon Maple Dijon Salad Dressing

- 1 tablespoon rendered bacon fat here's how I get mine
- 1 teaspoon stone ground dijon mustard
- 1 teaspoon pure maple syrup
Instructions
- Warm the bacon grease until it's liquid, then whisk everything together (if you're doing a large batch, I suggest emulsifying with an upright or stick blender so it doesn't separate).
- Enjoy!!!
