  • Butter – Salted, softened, 
  • Cream cheese – Softened. 
  • Egg – Large. 
  • Frosting – Cream cheese, butter, powdered sugar, milk.

Step-by-step directions

First, in a large bowl, use an electric mixer to beat together butter and cream cheese until fluffy. Beat in egg and cake mix. 

Next, scoop out cookie dough onto parchment lined baking sheet. Chill, then bake until just set. Cool on a wire rack.

Then, while cookies are cooling, make the frosting by beating together the cream cheese and butter. Beat in milk and powdered sugar. 

Finally, frost the cookies liberally.

Yes! To freeze the baked cookies, allow them to cool completely then store in a freezer safe air-tight container for up to 3 months. Thaw overnight in the refrigerator. We find it works best to freeze before frosting whenever possible. 

To freeze the dough, form into balls and roll in dough, then place in a freezer safe airtight container and separate layers with parchment paper.

✅ Make sure not to overbake. In fact, these cookies should be just slightly under-baked so they stay soft and melt in your mouth. 

✅ Bake on a lined baking sheet (with a silicone mat or parchment paper) or use a well greased cookie sheet (I prefer silpat!) to make sure the cookies don’t stick. 

✅ If you want the frosting to be pipeable, continue to beat in confectioners sugar until you reach a pipeable consistency. 

✅ Try topping with toasted sliced almonds or pecans for a delicious crunch.

Ingredients
 

COOKIES

  • 1 package butter cake mix not prepared
  • ½ cup salted butter softened
  • 8 ounces cream cheese softened
  • 1 large egg

FROSTING

  • 8 ounces cream cheese softened
  • ¼ cup butter softened
  • cups powdered sugar
  • ¼ cup milk whole milk

Instructions

COOKIES

  • In a large bowl, use an electric mixer to beat the butter and cream cheese until fluffy. Beat in egg and cake mix.
  • Scoop cookie dough, with a 1 tablespoon cookie scoop, onto a parchment or silpat lined baking sheet. Chill sheet with scooped cookie dough for 30 minutes.
  • Preheat oven to 350 degrees.
  • Bake the cookie for 10-12 minutes at 350°F until just cooked through. We want them to come out super soft. Transfer to wire rack about 5 minutes after removing from oven, to cool completely.

FROSTING

  • In a medium sized prep bowl, beat together cream cheese and butter until smooth. Whisk in the milk and powdered sugar.
  • Spread frosting liberally over cooled cookies.
