Banana Cookies are delicious! We’ve talked about my competing love for dessert and lack of ambition to make it. Which I consider a good thing, because you’d have to roll me out of my house if I liked to make sweets as much as I enjoy cooking savory foods. But when something only takes a few minutes and three ingredients, I can totally be talked into it.
These cookies are fluffy and light with just a hint of delicious banana flavor. Fair warning though, you’re going to have to give them away quickly, or lock them in a high cabinet because they are so addicting!

I made these banana cookies with the kids and picked up some cute greeting cards to go with them. I feel like the art of handwritten notes and card giving is waning, and that makes me sad. I don’t know if we’ll single-handedly revive it, but I’d like to be able to say I at least introduced my children to the concept.
We decided on banana cookies because I found this ridiculously cute Minions card at Walmart and everyone knows Minions love bananas! The card even came with a fun little Minions clip that I’m hoping my friend will put on her purse (or give to me).
Would it be terrible if I gifted the cookies and card to myself? “Hey, April! You’re kicking butt at parenting this morning! Love, April” – Okay, maybe not, but I might sneak a cookie (or three) before bringing the rest to my Minions loving friend!
How to Make Banana Cookies
Banana Cookies
Ingredients
- 1 box yellow cake mix
- 2 eggs
- 1 large ripe banana
- optional ingredients:
- icing I used the icing from this recipe
- sprinkles
Instructions
- Combine ingredients in a bowl and whisk with an electric mixer on high until all ingredients are incorporated and batter is starting to get fluffy.
- Spoon batter onto parchment lined baking sheets (you should get about 30 medium/small sized cookies) and bake at 350 degrees for approximately 10 minutes.
- If icing, wait until cookies are cooled, then dip in icing then sprinkles.
- Enjoy!

These cookies look so simple, yet delicious! I'm sure any Minion would struggle with will power with these as well! And I love the thought of pairing these with a Minions card as a quick birthday treat! #client
