Blueberry Ice Cream is my saving grace when the kids insist on swimming in the pool all. day. long.  Which means I have to sit on the patio and watch them all. day. long.  But I do it, because I remember how special those long summer pool days are.  Super duper special.

So, I sit in the sticky humidity, play on the iPad, and share my Blueberry Coconut Soft Serve with the baby.  What?  You didn’t think I quit dessert just because I’m all caveman crazy now, did you?  Oh, no.

  • 1 can coconut milk, chilled overnight
  • 3 cups blueberries, frozen
  • Sugar, if desired

How do you make a quick blueberry ice cream?

  1. Combine blueberries and coconut milk in a bowl and blend until you reach desired consistency.
  2. Serve immediately!

  • 1 can coconut milk chilled overnight
  • 3 cups blueberries frozen
  • powdered sugar to taste

Instructions

  • Combine blueberries and coconut milk in a bowl and blitz in a food processor or with an immersion blender until you reach desired consistency.
  • Add sugar and continue to blend, to taste.
  • Serve immediately, or freeze until set to desired consistency (not longer than 3 hours for best results).
