- Bell peppers – Any color bell pepper will work in this recipe, we love it with red, yellow, and orange because they’re so pretty.
- Onion – Sweet yellow onion or white onion. Thinly sliced.
- Cheese – Cream cheese and shredded cheese.
- Fajita seasoning – Make your own with our fajita seasoning recipe or grab some from the market.
- Cilantro – Fresh, for garnish.
- Tortillas – Optional; flour or corn tortillas for serving.
How do you make chicken fajita casserole? (step-by-step)
⭐ First, in a large bowl, combine the chicken, peppers, onion, cream cheese, fajita seasoning and half of the shredded cheese. Spread mixture into a casserole dish.
⭐ Then, bake until casserole is heated through and bubbling.
⭐ Next, sprinkle the remaining cheese over the top and return to the oven until cheese is melted.

Chicken Fajita Casserole
Ingredients
- 3 cups cooked shredded chicken (this is about the equivalent of 2 pounds uncooked boneless skinless chicken)
- 3 bell peppers thinly sliced, various colors
- 1 small yellow onion thinly sliced
- 8 ounces cream cheese softened
- 2 cups shredded cheese colby jack or Mexican blend
- 2 tablespoons fajita seasoning (or 1 store bought packet)
- cilantro for garnish
- optional, for serving: flour tortillas, rice, desired toppings
Instructions
- In a large bowl, combine the chicken, peppers, onion, cream cheese, fajita seasoning and half of the shredded cheese. Spread mixture into a 9x13 inch casserole dish.
- Bake uncovered at 350°F for 20 minutes.
- Sprinkle the remaining 1 cup of cheese over the top and return to the oven for another 5 minutes, until cheese is melted.
- Sprinkle with cilantro, if desired. Serve with tortillas or rice.

Like another reader, I knew this would be good, so I made 2. I used disposable pans (easy), and heated the peppers/mushrooms with some of the fajita seasoning. I mixed the rest of the seasoning in with the cream cheese before combining with meat, etc.
I layered it like a lasagna with larger, burrito sized tortillas. Baked it 45 min with foil on top, then 10 minutes without the foil. It crisped up the top tortilla with cheese topped. YUMMMMMY!!! Beef OR Chicken should work! THANKS~!!!!!!
