Pork and beans casserole is sweet beans & salty pork covered in melty cheese topped with a perfectly browned biscuit all baked in one dish.

My nine year old is completely obsessed with this pork and beans casserole recipe.  It hits all the notes – savory, sweet, cheesy. And major bonus, it’s incredibly easy to make. Try it with a side of brussels sprout salad

Pork and Beans Casserole Ingredients

  • Baked beans – I like vegetarian baked beans for this recipe since we’re adding meat, but you can use whatever you’d like.  This would be great with our homemade baked beans recipe!
  • Hot dogs – Pork hot dogs sliced into small bite sized pieces.
  • Tomatoes – Canned diced tomatoes.
  • Onion – Sweet yellow or white onion, diced.
  • Cheese – Shredded Fiesta blend or Mexican blend cheese.

How do you make pork and beans casserole? (step-by-step)

First, in the bottom of a casserole dish, mix together beans, hot dogs, tomato, and onion. Top with shredded cheese.

Then, remove biscuit dough from tube and using your fingers, or a rolling pin, flatten each biscuit and shape so that it fits in the pan, covering the top of the casserole. It is important to make the biscuits thinner so they will cook through completely.

Next, if you’d like baste the top of each biscuit with whisked egg, heavy cream, or butter.

Finally, bake on center oven rack uncovered at until biscuits are golden brown on top and cooked all the way through.

Preparation

Can you make pork and beans casserole ahead of time?

Yes, this can be prepared and stored in the refrigerator for 2 – 3 days or in the freezer for several months.

Can I use homemade baked beans instead of canned baked beans?

Absolutely! You’ll want about 3 cups of homemade baked beans to replace the canned baked beans. My preference is to use beans without meat since we’re adding hot dogs to the casserole.

What vegetables can I add?

Adding veggies to your casserole is a great way to bulk it up and add more nutrition.

My favorite vegetable to add to this recipe is diced green pepper.  My kids are partial to corn.

EGG WASH ON PORK AND BEANS CASSEROLE
Brush with whisked egg so the tops brown nicely.

Leftovers and storage

How long does pork and beans bake last?

The leftovers will keep in the refrigerator for 3 – 4 days. Keep in an air tight container for best results.

Can you freeze it?

Yes! This recipe should be baked before it is frozen, even if you’re freezing the whole casserole.

To freeze, allow the casserole to cool to room temperature then double wrap in both foil and plastic wrap or use a freezer friendly dish with an air tight cover, and store in the freezer for up to 3 months.

Can you bake from frozen?

To bake from frozen, cover with foil  and bake at 350F for 60 minutes. Remove foil and continue baking for an additional 10 – 15 minutes or until completely heated through.

Make sure if you are baking from frozen that your dish is freezer to oven safe, not all glass and ceramic dishes are.

Alternatively, thaw in the refrigerator and bake at 350F for about 30 minutes or until completely heated through.
