You’re going to want to put this curry mustard sauce on absolutely everything. It’s creamy, and tangy, and perfectly full of bold delicious flavor!
I absolutely adore the Curry Mustard at Pollo Tropical, so I set out to find the recipe. After scouring the interwebs and finding several versions that claim to be ‘The Real Thing!’, I decided to experiment with what I had on hand. And guess what? It’s AWESOME!!! And so much easier than the other recipes I found.

This is mild but flavorful! Great on sandwiches, salads, as a dip… and I suspect it would make a fantastic marinade too. Try it on your next steak sandwich or in your ham and cheese croissants!

Curry Mustard Ingredients
- Mayonnaise – Full fat, low fat, or fat free will all work. Just make sure it’s not Miracle Whip, because the flavor will not be the same.
- Yellow mustard – Good old fashioned yellow mustard like we put on a hot dog!
- Curry powder – My favorite is Blue Mountain Country Hot Jamaican Curry Powder. It’s not hot or spicy in the amount we use for this recipe.
How do you make curry mustard sauce?
⭐ First, combine mustard, mayonnaise, and curry powder in a bowl.
⭐ Next, whisk together until fully incorporated.
⭐ Finally, use immediately or store in the refrigerator.
What is curry mustard?
This sauce is a creamy mustard sauce flavored with yellow curry. It is inspired by the sauce at Pollo Tropical, a local Caribbean inspired fast food restaurant. Have you been to Pollo Tropical? They have the most wonderful sauce bar with all sorts of delicious goodies like Curry Mustard Sauce, Chimichurri Sauce, and Cilantro Garlic Sauce.

How to Make Curry Mustard Sauce
Curry Mustard Sauce {Pollo Tropical Inspired}
Ingredients
- 1 cup mayonaise I used light
- 1/4 cup yellow mustard
- 1 TBS curry powder I use Blue Mountain Country Hot Jamaican Curry Powder. It's really not hot in the slightest.
Instructions
- Mix ingredients well.
- For best results, refrigerate overnight.
- Enjoy!

My hubby just discovered a curry dish at a local Thai place that he loves–I'll have to try out this sauce!
I actually tried to find the Pollo recipe for the curry sauce and stumbled across this recipe online. I love it! I also love to thin it out a little with some water and use it in a chicken/rice chop like Chicken Kitchen =)

Just had pollo tropical curry mustard for time and had to find a way to make it. So glad I found your site. Immediately made a batch since you said to let it chill. At the same time, I boiled eggs to avoid another cartoon being tossed. I decided to use the curry mustard and make an egg salad. The combination was so good that I wanted to lick the bowl. Thanks!
Omg! So I gotta stop eating junk. I grilled tilapia which I expected to be torture because I only like fish fried. Then I remember my curry mustard. I put a nice layer on the fish and grilled. Once again, I could have licked the plate.
Thank you for posting this! My entire office is obsessed with this sauce and we make trips to Pollo every week and can't ever get enough sauce! I have yet to try it, but my co-workers asked me to find the recipe and see if I could replicate it. I actually placed an order at Pollo Tropical for 7 people today and while I was waiting for the food, I noticed that they had several large containers of Gulden's Brown Mustard. I couldn't figure out what it was for and then saw your recipe! When I told my co-workers about the recipe and brown mustard, they started analyzing the cup of Pollo's Curry Mustard sauce and all agreed that there is brown mustard in the sauce. Like I said, I haven't tried the sauce from Pollo, so I can't compare it to yours at all. I can't wait to make this and see how it compares. Thanks for posting! 🙂
What kind of mustard are people using on this recipe? I've tried to make it a couple of times, and even halving the mustard to 1/8 cup still results in it tasting of nothing but mustard – nobody can taste any curry in it at all.
maybe try a stronger curry? i just used yellow mustard 🙂

This is the sauce Edward Coates, the owner of a flourishing party butlering business, would make for my grandmother’s parties in Washington, D.C. in the 1930s, plus for my parents’ parties as late as 1974 (including my sister’s wedding). I think he might have been from Jamaica. I make this recipe for parties, and will make some in two days. A suggestion is to blend the curry powder and mustard thoroughly before adding the mayonnaise, as it turns out more smoothly that way.
