And again, I’m writing this edition of the Easy Recipes Weekly Meal Plan from the passenger seat of our van! Right now we’re driving through Delaware on our way to Fredericksburg, Virginia for the night – and then on to South Carolina in the morning. (Although, if you want to get technical traffic just came to a complete stop. Boo.) (And the babies are crying. Ack. I’ll be back in a minute…)
Okay! I’m back! Traffic is moving again and kids are settled. (Phew!) So, about this week’s meal plan. I’m feeling a bit overwhelmed so I included some easy slow cooker dishes and one of my favorite two ingredient desserts (YUM!). We’re keeping it really simple this week. Hopefully you’re a little less stressed than I am, but either way this is a great group of recipes and perfect for your (my) over-scheduled days. I’d like to suggest making a double batch (you have two slow cookers, right?) of the Chicken Tortilla Soup (you could totally do it on the stovetop too) and freezing some for another week. Two birds with one stone – amiright?!
