Parmesan crusted chicken is a family favorite in our house. In fact my daughter is sitting with me right now watching vanlife videos (we’re a little obsessed) and she just looked over and asked if we could have this for dinner again tonight. Which, I think we will, with some sautéed veggies and quick dinner rolls!

Ingredients for parmesan crusted chicken
- Chicken – We used breasts, but this recipe works great with chicken thighs too!
- Mayonnaise – Full fat is better, but you can also use low fat.
- Parmesan cheese – You can use expensive parmesan, but I totally use the kind in the green plastic canister.
- Breadcrumbs – Italian seasoned.
- Garlic salt
How do you make parmesan crusted chicken? (Step-by-step)
⭐ First, slice each chicken breast half lengthwise.
⭐ Next, in one bowl whisk together mayonnaise and parmesan cheese. In a second larger bowl mix together breadcrumbs and remaining parmesan cheese.
⭐ Then, slather each cutlet in the mayonnaise mixture, then press into breadcrumb mixture. Place chicken in pan and sprinkle with garlic salt.
⭐ Finally, bake until browned and crispy.

Should you rinse the chicken before baking?
No, any bacteria on the surface of chicken will be killed in cooking. Rinsing can potentially spread harmful bacteria around the kitchen, increasing the risk of food borne illness.
Should I brine the chicken first?
If you have the time, you should always brine chicken before baking (this is true for any chicken recipe!). Try our easy three ingredient chicken brine for something quick. That said, the mayonnaise in this recipe keeps the chicken super moist, so don’t worry if there’s no time for brining.
Is parmesan chicken baked or fried?
This recipe is baked until golden brown, resulting in a perfectly tender and juicy chicken breast with no frying mess.
Can I fry it instead?
If you prefer to fry parmesan chicken, you’ll want to skip the mayo and use whisked egg instead. Don’t add any parmesan to the egg, rather add it all to the breadcrumbs. Pat your chicken dry, then dredge it in the egg and coat it with the breadcrumbs. Fry in cooking oil over medium heat until crispy on both sides and cooked through.
Leftovers and storage
How do you reheat parmesan chicken?
This dish is best reheated in a toaster oven or traditional oven until warmed through and crispy on the outside again. It can also be reheated in a microwave in 30 second increments until heated through.
How long does parmesan baked chicken last?
Leftovers will keep for about 3 days in a sealed container in the refrigerator. Freezing is not recommended for this recipe.
Tips and trick
🔥 Make it spicy by adding some chili powder chipotle seasoning to the breadcrumbs.
⚖ Lower calories by using low-fat mayonnaise and only coating the top of the chicken with mayo and breadcrumbs.

What to serve with parmesan crusted chicken
This recipe has classic flavors that remind me of holiday eating, so we often serve it with cranberry sauce, mashed potatoes (or mashed cauliflower), and a strawberry spinach salad. Oh, and don’t forget some homemade chocolate chip cookies for dessert!

Parmesan Crusted Chicken
Ingredients
- 1 cup mayonnaise
- ¾ cup grated parmesan cheese divided ¼ and ½
- 4 large chicken breasts boneless/skinless
- 1 cup Italian seasoned dry bread crumbs
- garlic salt to taste
Instructions
- Slice each chicken breast half lengthwise so you have a total of 8 long and thin chicken cutlets.
- In one bowl whisk together mayonnaise and ½ cup parmesan cheese. In a second larger bowl mix together breadcrumbs and remaining ¼ cup parmesan cheese.
- Slather each cutlet in the mayonnaise mixture, then press into breadcrumb mixture, making sure to coat chicken on all sides.
- Place chicken in a roasting pan (or lipped baking sheet) and sprinkle with garlic salt.
- Bake at 425F for 25 - 30 minutes until browned and crispy and chicken has reached a safe internal temperature of 165F.
