- Ground meat – We use ground beef for this recipe, but it would also work with ground chicken, ground pork, or ground turkey.
- Onion – My preference is sweet yellow onion, but white onion will also work.
- Mushrooms – Sliced white mushrooms or sliced baby portabella mushrooms.
- Garlic – Minced garlic. Fresh or jarred is fine.
- Bouillon – Beef bouillon cubes (dissolved) or paste.
- Sour cream – Full fat works best in this recipe, but you can also substitute for plain Greek yogurt if desired.
- Optional – Buns, sliced cheese.

Traditionally this recipe calls for red meat (ground beef, specifically) but you can use any kind of ground meat, or ground beef substitute if you’re looking for a vegetarian option.
We are partial to using ground turkey and substituting the sour cream for Greek yogurt if we’re watching calories.

It will keep for 3 – 4 days in the refrigerator or longer in the freezer. Store in an air tight container for best results.
Can you freeze it?
Yes, allow the mixture to cool almost to room temperature, then store in an air tight freezer safe container. Make sure to leave head room for expansion. Store in the freezer for up to 3 months.
Defrost in the refrigerator overnight.
How to reheat a beef stroganoff sloppy joe recipe?
My preferred method of reheating is in a skillet on the stove top over medium-low heat. Add some water to loosen if it has thickened up.
You can also reheat in the microwave on high in 30 second increments for single portions or 1 minute increments for larger portions. Stir between heat cycles.

Ingredients
- 1 pound ground beef
- 1 small yellow onion diced
- 8 ounces baby portabella or white mushrooms sliced
- 1 tablespoon minced garlic
- 16 ounces sour cream
- 2 beef bouillon cubes or equivalent amount of paste dissolved in about ¼ cup hot water.
- 6 buns
- optional sliced cheese
Instructions
- In a large skillet, brown meat over medium heat, breaking it up into small pieces. Drain off excess liquid and add onion and mushrooms to the skillet. Keep cooking until onions are translucent.
- Add bouillon and garlic, continuing to sauté until garlic is fragrant.
- Lower heat and stir in sour cream until everything is mixed will and heated through.
- Serve on a bun with your favorite toppings.
