Asparagus soup may not be as popular are our Slow Cooker Baked Potato Soup, but I truly think it’s the unsung hero of our repertoire. I made this creamy soup for my grandfather once. He claimed he loved soup, but NOT asparagus soup. Needless to say, we changed his mind and he enjoyed thirds!

- Bacon fat – Or olive oil, if you prefer
- Chicken stock –

- Heavy cream – This is optional. You can skip it entirely or try milk or half and half instead.
- Optional garnish – Crumbled bacon, parmesan cheese, extra cream
How do you make asparagus soup? (Step-by-step)
⭐ First, saute onion, garlic, and seasoned salt in bacon until onions are soft and translucent.
⭐ Next, pour in chicken stock and bring to a light boil. Add asparagus.
⭐ Then, simmer until asparagus is soft.
⭐ Finally, add heavy cream and puree until smooth.

Preparation
How can I thicken up my asparagus soup?
- Create a roux by adding flour to to the recipe when you heat up the fat or vegetable oil.
- Add a starch slurry with equal parts corn starch and cold water (in tablespoon increments). Stir that into the soup toward the end while simmering.
- Toss a few tablespoons of dried potato flakes in at the end until you reach your desired consistency.
Can I use frozen asparagus?
You can absolutely use frozen asparagus in this soup, it’s a great way to enjoy it all year long.
Can you make it without cream?
This recipe is delicious and surprisingly creaming both with and without the addition of heavy cream. I love it with heavy cream, but you can skip it entirely or swap it for milk or half and half if you prefer.
Can you make asparagus soup in the instant pot?
You can make this in the instant pot. You’ll want to use the saute feature, then a quick high pressure, followed by blending with the heavy cream. Full instructions are included in the recipe card below.

Storage and leftovers
Can you freeze fresh asparagus soup?
You can definitely freeze fresh asparagus soup! Ideally, you’ll want to freeze the soup before adding the heavy cream. That said, if you’re trying to freeze leftovers that already have heavy cream added, just make sure to reheat slowly and stir well so the cream doesn’t turn a weird consistency.

What can you do with asparagus ends?
Asparagus ends can be used in cooking, but to be perfectly honest, I feel like they take more work than it’s worth for me. We keep a compost container on our counter and the asparagus ends go there. Eventually they feed our garden, and that makes me happy.
Is asparagus soup good for you?
It all depends on what diet you are following and what ingredients you use. As written, it’s full of healthy vegetables and fats. This asparagus soup recipe has no added sugar and no grains. It is also very easily modifiable. If you are vegetarian use olive oil and vegetable stock, if you are dairy free, skip the cream altogether or use coconut cream or cashew cream instead!

How to Make Asparagus Soup
Asparagus Soup
Ingredients
- 2 pounds asparagus chopped, woody ends discarded
- 2 cloves garlic minced
- 1 cup diced sweet yellow onion
- 1 heaping tablespoon bacon fat or olive oil
- 1 teaspoon seasoned salt
- 7 cups chicken stock
- 1/2 cup heavy cream OPTIONAL
- optional garnish: Crumbled bacon, parmesan cheese, extra cream
Instructions
STOVE TOP
- Saute onion, garlic, and seasoned salt in bacon fat for about ten minutes, until onions are soft and translucent.
- Pour in chicken stock and bring to a light boil. Add asparagus.
- Simmer covered for 20 - 30 minutes, until asparagus is soft.
- Add heavy cream (if desired), and puree with an immersion blender until smooth (or carefully pour into your upright blender).
INSTANT POT
- Use saute function to saute onion, garlic, and seasoned salt in bacon fat for about ten minutes, until onions are soft and translucent.
- Pour in chicken stock and add asparagus. Set to manual (high pressure) for 5 minutes. Do a careful quick release (pause release if the soup begins to sputter).
- Add heavy cream (if desired), and puree with an immersion blender until smooth (or carefully pour into your upright blender). If needed, bring back up to temperature using the saute function.
