This Sweet Potato Curry Soup combines two of my faaaaaavorite things to eat! Soups (yay!) and curries (double yay!) It’s definitely on my NOM NOM NOM list. That is to say, you should totes make it because: DELISH.
The recipe makes a really thick and decadent soup that can totally fill you up for a full and satisfying meal – but you could also drop in some protein like chopped chicken and serve it over rice or cauliflower for more of a saucy or stewy (I think I just made up that word) effect. Try it with some baked chicken breasts or over cauliflower rice!

Sweet Potato Curry Soup Ingredients
- Diced sweet potato
- Coconut milk (about 15 ounces)
- Beef broth (or vegetable broth if you don’t eat meat)
- Peanut powder (peanut butter would work fine too)
- Yellow curry powder
- Onion powder
- Granulated garlic
- Salt & pepper
How do you make sweet potato curry soup?
⭐ First, bring broth and coconut milk to a simmer. Stir in remaining ingredients and simmer covered until sweet potato is tender and cooked through.
⭐ Then, puree soup with an immersion blender (or very carefully in your upright blender).
⭐ Finally, serve as a soup or over a starch or protein like roasted cauliflower or homemade egg noodles.
Can you make sweet potato curry soup ahead of time?
My word of the year is SIMPLIFY – and it goes for everything from my home (de-clutter central!), my mind (trying not to focus on too many tasks at once), and my food (fewer components and more recognizable ingredients).
This soup fits perfectly into that mantra – only a few well known ingredients (you probably already have them!), everything gets cooked in one pot, and it’s done quickly. Also, it freezes well so I can simplify my evening routine by cooking a double batch for another time.
Can you freeze sweet potato curry soup?
This soup gets bonus points for being so easy to make and freezer friendly to boot. If you store it in the fridge or freezer, it may thicken a bit – not to worry, just add a touch of water or stock until you’ve reached a good consistency!
You could absolutely use fresh herbs and spices for the soup, but honestly it’s so good as written and the fact that everything but the sweet potato (or maybe even that) can just be chilling in your kitchen indefinitely waiting for your taste buds to scream “we need this soup tonight!” is kind of part of the appeal.
Can the soup be made in a slow cooker?
Yes, to make sweet potato curry soup in the crock pot or slow cooker, add all the ingredients to your slow cooking vessel, stir well, and then cover and cook on high for 4 hours or low for 6. Then use your immersion blender to blend until smooth. (Full directions are available in the recipe card below).
Can the soup be made in an instant pot?
Sweet potato curry soup can be made in the instant pot! Bring broth and coconut to a simmer on the saute function. Then add remaining ingredients and stir well. Put lid on and turn knob to ‘sealing’. Set to manual for ten minutes, then hit cancel when time has stopped.
Natural pressure release for at least 5 minutes, then open and blend with your immersion blender until smooth. (Full directions are available in the recipe card below).
Nicholas (or Coley if you ask him) was shadowing me in the kitchen while I worked on this recipe and made absolutely sure that I included him on the camera roll. He even insisted I get up on a stool and shoot him from above like I do for my staged recipes!
This two year old is cute, but he is SOOOOO cliche two it’s not even funny. At kid number five I’m finally understanding why people shudder at the thought of raising two year olds! {Update – he’s now six – OMG, and still as crazy as ever. Haha!}

How to make sweet potato curry soup
Sweet Potato Curry Soup
Ingredients
- 4 cups diced sweet potato
- 1 can coconut milk about 15 ounces
- 2 cups beef broth or vegetable broth if you don't eat meat
- 3 tablespoons peanut powder - peanut butter would work fine too
- 2 tablespoons yellow curry powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon salt
- pepper to taste
- optional garnish chopped peanuts and scallions
Instructions
STOVE TOP DIRECTIONS
- On the stove top, bring broth and coconut milk to a simmer. Stir in remaining ingredients and simmer covered until sweet potato is tender and cooked through.
- Puree soup with an immersion blender (or very carefully in your upright blender).
SLOW COOKER DIRECTIONS
- Add all ingredients to the slow cooker and mix well. Cover and set to high for four hours or low for 6.
- Puree soup with an immersion blender until the consistency is to your liking.
INSTANT POT DIRECTIONS
- Using the saute function, bring broth and coconut milk to a simmer. Stir in remaining ingredients.
- Cover and set to "sealing". Cook on manual setting for ten minutes, then hit cancel and allow soup to release pressure naturally for at least 5 minutes (ideally 10 minutes to avoid splatter).
- Puree soup with an immersion blender until the consistency is to your liking.
