Step By Step Directions

Step 1: Bake the Crust

Unroll the pie crusts and gently roll them out just enough to fit a sheet pan. Lay them onto the ungreased pan and crimp the edges together if needed. Prick the entire crust with a fork so it doesn’t puff up while baking.

Bake for about until golden brown. Remove from the oven and allow it to cool completely before adding the filling.

Step 2: Make the Whipped Cream

In a large bowl, beat the heavy whipping cream and sugar with an electric mixer until stiff peaks form. Set aside.

Step 3: Prepare the Chocolate Filling

In another bowl, beat the chocolate instant pudding mix with the milk until fully combined and smooth. Take one cup of the whipped cream and gently fold it into the pudding mixture.

Step 4: Assemble

Spread the chocolate filling evenly over the cooled crust. Top with the remaining whipped cream, spreading it gently all the way to the edges.

Shave semisweet chocolate over the top for that classic French silk finish and refrigerate for at least 2 hours to allow it to set before slicing.

Tips for the Best French Silk Slab Pie

  • For cleaner slices, wipe your knife between cuts.
  • Let the crust cool completely before adding filling. Warm crust = melty filling.
  • Don’t skip folding in whipped cream to the pudding, that’s what gives it that silk-like texture.
  • Use a vegetable peeler to shave the chocolate bar for beautiful curls.

Can I Make This Ahead of Time?

Yes! In fact, it’s better when made ahead. You can prepare it up to 24 hours in advance and keep it covered in the refrigerator.

Storage

Store covered in the refrigerator for up to 3 days.

Because of the whipped cream topping, this dessert does not freeze well, it’s best enjoyed fresh and chilled.

Frequently asked questions

Is this a traditional French silk pie?

This is a shortcut version inspired by classic French silk pie. Traditional versions use a cooked egg-based filling, but this one uses instant pudding and whipped cream for a quicker, no-fuss option.

Can I use homemade whipped cream instead of store-bought?

Yes — and in this recipe, we actually make it from scratch using heavy whipping cream and sugar for the best texture and flavor.

Can I use a graham cracker crust instead?

You can use a graham cracker crust, but you’ll need to press and pre-bake it in a sheet pan. The traditional pie crust gives it that classic French silk feel.

How long does it need to chill?

At least 2 hours so the filling can fully set. If you have extra time, 3–4 hours is even better for clean slices.

Can I make this ahead for a party?

Absolutely. It’s perfect made the day before — just keep it covered in the refrigerator until serving.
