Pork and Sauerkraut Ingredients
- Pork – We used boneless pork loin but this recipe can be made with tenderloin, pork shoulder, or pork butt as well.
- Sauerkraut – Prepared sauerkraut, drained.
- Apple – Peeled and diced.
- Onion – Sweet yellow onion, diced.
- Apple juice – No sugar added.
- Seasonings – Salt and pepper.
How do you make pork and sauerkraut? (step-by-step)
⭐ First, if desired, trim excess fat off of the pork, and place in the slow cooker.
⭐ Next, top with the sauerkraut, onion, and apple, then season with salt & pepper.
⭐ Then, cook until pork is cooked through and shreds easily.
⭐ Finally, remove the pork loin and shred. Serve with the sauerkraut.

Yes, this recipe, and the pairing of pork and sauerkraut generally has German roots. It is often eaten on New Years, but we enjoy it all year!
What kind of pork should I use?
Traditionally this recipe calls for pork loin, but you can also use pork butt or shoulder (my personal favorite) or pork tenderloin (be careful as tenderloin is very lean and can turn out a little bit dry).
Storage and leftovers
How long does pork and sauerkraut last?
Leftovers will keep in the refrigerator for 3 – 4 days, or longer in the freezer. Store in a sealed/air tight container.
Can you freeze it?
Yes, allow the food to cool to about room temperature, then store in a freezer safe air tight container. Make sure to leave enough head room for expansion.
This will keep up to 6 months in the freezer.

Ingredients
- 3-4 pounds boneless pork (loin, shoulder, butt, or tenderloin)
- 2 pounds sauerkraut drained
- 1 apple peeled & diced
- 1 small sweet yellow onion diced
- 1 cup apple juice
- salt & pepper
Instructions
- If desired, trim excess fat off of the pork. Place meat in the slow cooker.
- Top with the sauerkraut, onion, and apple, then season with salt & pepper.
- Cook on high 4-6 hours, or low 8-10 hours. Until pork is cooked through and shreds easily.
- Remove the pork and shred. Serve with the sauerkraut.
