Preparation
What kind of biscuits?
I like to use canned biscuit dough that can be found in the refrigerated section at your market. You could also use a homemade biscuit dough.
What can I use instead of biscuits?
If you’d like to keep this gluten free or just don’t want to use biscuits you can swap them for a bag of frozen or refrigerated shredded hash browns.
What kind of meat for crock pot breakfast casserole?
We used diced ham (leftover from our crockpot holiday ham!) but this is also delicious with cooked breakfast sausage, cooked and crumbled bacon, leftover diced steak, or a mix of whatever you have on hand.
Cover and cook until biscuit dough has puffed up and eggs are cooked through.
Leftovers and storage
How long do the leftovers last?
Store leftovers in an air tight container in the refrigerator for up to 4 days. Reheat in individual portions on high heat in the microwave.
Can you freeze crock pot breakfast casserole?
We don’t recommend freezing this recipe as eggs don’t typically reheat well after having been frozen.
Don’t have ham? Use any of your favorite cooked breakfast meats or dinner leftovers!
