Pumpkin Crinkle Cookie Ingredients

  • Spice cake mix – I love spice cake mix for this, but you could also use a white cake mix or yellow cake mix and add a tablespoon of pumpkin pie spice
  • Egg – Large egg. 
  • Pumpkin – Canned pure pumpkin puree. Make sure you don’t accidentally get pumpkin pie filling, it’s not the same!
  • Chocolate chips – We used mini semi sweet chocolate chips. White chocolate chips would also be delicious. 
  • Confectioners sugar – Also called powdered sugar or icing sugar.

My preference is spice cake mix, but you can also use white cake or yellow cake mix.

How do you make cake mix pumpkin crinkle cookies? (step-by-step)

First, mix together cake mix, egg, and pumpkin with an electric mixer until fully combined. 

Next, scoop dough out in balls and roll in powdered sugar. Drop on a parchment lined baking sheet. 

Then, bake until cookies are just done and slightly browning on the bottoms. 

Finally, cool on a wire rack before enjoying.

Absolutely! They can be made a few days ahead of time, or if you want to make them longer, stash your cookies in the freezer.

Cake mix cookie dough tends to be on the sticky side, this it totally normal. I like to use a cookie scoop with a release on the handle to easily make evenly sized dough balls. 

What brand of cake mix for pumpkin crinkle cookies?

Any brand of mix will work. Don’t worry if the boxes are slightly different sizes, this recipe is very forgiving!

The cookies should be stored in an air tight container and can remain at room temperature for about three days. Longer than that and you’ll want to store your chocolate cake mix cookies in the refrigerator or freezer.

Can you freeze pumpkin crinkle cake mix cookies?

Yes, you can freeze these cookies.  Allow them to cool completely, then store in an air tight, freezer safe container. Cookies can remain in the freezer for several months, after which time you run the risk of freezer burn and they will begin to deteriorate in texture and flavor.

To thaw, allow the cookies to come to room temperature and then enjoy!

Can I add chocolate chips?

Yes! Stir in a handful of chocolate chips after mixing up the dough. You can still roll them in powdered sugar after or just skip that step. 

Do I need to grease my cookie sheet?

These can be baked on an ungreased cookie sheet, but I prefer to bake them on a silicone baking mat so I never have to worry about sticking.

Ingredients
 

  • 1 package spice cake mix
  • 1 egg large
  • ½ can pure pumpkin puree (½ of a 15 ounce can)
  • 1 - 2 cups powdered sugar

Instructions

  • Beat together the cake mix, pumpkin, and egg.
  • Drop tablespoon sized balls into a bowl of powdered sugar (we like to use a cookie scoop for this) and coat generously on all sides. Place onto a lined cookie sheet.
  • Bake at 350F degrees for 10 to 12 minutes.
