- 2 heads garlic peeled (about 20 cloves)
- 4 tablespoons olive oil
- salt and pepper to taste
- 40 ounces cheese tortellini frozen or refrigerated

- Add peppers, onion, and garlic to a baking sheet. Drizzle with oil and sprinkle liberally with salt and pepper. Roast on the center rack of a preheated 400℉ oven for 30 minutes.
- While vegetables are roasting, prepare tortellini per package directions. Reserve 1 cup pasta water, then drain and set aside.
