Are you getting tired of all the pumpkin and soup recipes yet? I sure hope not, because there’s still a few more coming! This Simple Pumpkin Spice Cake is one of my husband’s favorite treats, although he’ll swear to you up and down that he does not eat cake. Hahaha. Yes, he does. And I’m so glad it’s this cake, because, YUM.
Simple Pumpkin Spice Cake Ingredients:
- one box vanilla cake mix
- one can pumpkin (15 oz)
- one egg
- 1/4 tsp ground ginger
- 1/2 tsp ground nutmeg
Simple Pumpkin Spice Cake Directions:
- Combine all ingredients in a large bowl and mix thoroughly (I used a hand held electric mixer for about 60 seconds).
- Pour batter into a lightly greased, or parchment lined, 9″ round baking pan.
- Bake at 350 degrees for approximately 40 minutes.
- Allow to cool at least ten minutes before removing from pan.
