I’m not much of a resolution maker, but at the start of each year I choose one word to (hopefully) define the coming 365 days. This year my word is INTENTIONAL. It was inspired by our neighbor who hosted New Year’s Eve and asked if we were intentional eaters. It got me really thinking about how important it is to make my actions mean something. Not just with eating, but with how I use my time, what things I hold on to, where I visit, what happens to my money, and with whom I cultivate relationships. I’m making an effort to live intentionally in all aspects of my life, and that definitely includes food.
To that end I am seeking out foods that are more wholesome, more colorful, and more fulfilling. And this Slow Cooker Strawberry Spread sweetened with Truvia fits the bill perfectly. Serve with fresh bread or extra dark chocolate and a hot cup of Bigelow tea, and enjoy in the evening when it’s quiet and there’s time to pause and reflect.
Also in line with using my time intentionally, I have been taking advantage of our babysitters and separating my work time from home time. I feel like I give my children a better version of myself when I’m able to fully focus on them, rather than dividing my attention with a computer screen or dragging them on work errands. When I was out earlier this week I ran into Target and grabbed a few bags of frozen strawberries, a couple variety packs of Bigelow tea, and some Truvia. This barely qualifies as a recipe, it’s so so easy.
Slow Cooker Strawberry Spread
Ingredients
- 4 pounds strawberries hulled (I used frozen, thawed)
- Truvia to taste
Instructions
- Add strawberries to your slow cooker and cook on low for 10 - 12 hours.
- Stir and break up strawberries a bit (if you like it smoother, you can blitz for a minute with an immersion blender)
- Put lid askew and cook partially uncovered an additional 2 - 4 hours (depending on how thick you want it). Note that it will thicken some when refrigerated.
- Stir in Truvia (one tablespoon at a time) until you reach your desired sweetness.
- Enjoy!
