Preparation
Can Valentine’s millionaire bars be made ahead of time?
Yes! These can be made a day or two in advance. Store them in the refrigerator in an airtight container until ready to serve.
What’s the best chocolate for Valentine’s millionaire bars?
For the white chocolate, we used white melting chocolate because it melts so smoothly. You can also use white chocolate chips or almond bark.
We used melting chocolates for the red and pink chocolate because the color is so vibrant but you could also use more white chocolate and color with red and pink food coloring.
What kind of caramel to use for Valentine’s millionaire bars?
We used the small wrapped Kraft caramels so unfortunately, that means unwrapping ALL of those individually packaged delectable caramels. However, these will give you the BEST creamy and smooth melted caramel layer for your millionaire bars.
Storage and leftovers
How long do Valentine’s millionaire bars last?
Store these in an airtight container in the fridge for up to 5 days.
Can Valentine’s millionaire bars be frozen?
Yes, store them in a single layer or stacked between wax paper in an airtight container in the freezer for up to 3 months. Thaw in the fridge and enjoy!
Tips and tricks
✅ When swirling the chocolate, be careful not to swirl the caramel as well. Keep the knife on the very top of the chocolate.
✅ To make these in the traditional way, use milk or dark chocolate for the top layer.
✅ If using dark chocolate for the top layer, sprinkle the top with some coarse sea salt!
✅ Make a Christmas version of these and use white, red and green chocolates.
✅ We recommend slicing these into smaller bars as they are a very rich dessert!
Frequently asked questions
Can I make these bars without a mixer?
Yes, you can! While an electric mixer makes the process quicker, you can mix the shortbread ingredients by hand. Ensure that the butter is softened for easier incorporation.
What’s the purpose of pricking the shortbread with a fork before baking?
Pricking the shortbread with a fork serves two purposes. It helps prevent the shortbread from puffing up unevenly during baking, and it creates a textured surface for the caramel layer to adhere to.
Can I double the recipe for a larger batch?
Certainly! You can double the ingredients and use a larger baking dish to make a larger batch. Adjust the baking time accordingly and keep an eye on the layers for optimal results.
Are there any alternative methods for melting chocolate if I don’t have a microwave?
Yes, you can use a double boiler or create a makeshift one by placing a heatproof bowl over a pot of simmering water. Stir the chocolate until smooth and melted.

How to Make Valentine’s Millionaire Bars
Valentines Millionaire Bars
Ingredients
- 1 cup salted butter (2 sticks) softened
- 1 cup white granulated sugar
- 1 teaspoon real vanilla extract
- 2¼ cups all purpose flour
- 2 packages caramel squares (11 ounces each)
- ½ cup heavy cream
- 12 ounces white almond bark, white melting chocolate, or white chocolate chips
- 1 cup red candy melts
- 1 cup pink candy melts
- sprinkles
Instructions
- In a medium bowl cream together the butter and sugar with an electric mixer until light and fluffy. Add the flour and vanilla and mix until just combined (it will be crumbly).
- Gently press the shortbread dough into a parchment lined 9x13" pan. Prick dough with a fork all over then bake on the center rack of a preheated 325℉ oven until lightly golden (about 30 minutes). Set aside to cool.
- While shortbread is cooling, heat caramels and cream in a small pot over medium-low heat, stirring constantly until everything is combined and no lumps remain. Pour the caramel sauce over the shortbread layer and set aside to cool.
- When the caramel layer has cooled, melt your colored candy melts in separate microwave safe bowls. Begin with the white melts and microwave on high power for 20 second increments, stirring between heat cycles, until completely melted and smooth.
- Pour the white chocolate over the caramel layer and spread to cover completely. Repeated melting directions with the red and pink candy melts, then add dollops of the melted colors to the top of the bars. Use a knife to swirl the colors and make patterns.
- Top with sprinkles before candy melts set, then refrigerate to allow the dish to firm. Slice into 24 pieces before serving (we like to use a warm knife for this to easily cut through the chocolate/candy melt layer.
