- Gumdrops – Cut in half.
How do you make snowman brownie bites? (step-by-step directions)
⭐ First, cut the edges off the brownies and cut into squares. Place a cherry in the middle of a brownie square and wrap the brownie around the cherry. Roll into a ball. Place on a parchment lined baking sheet.
⭐ Next, chill brownie balls in the fridge. In a medium bowl, microwave the almond bark in intervals, stirring until smooth and melted.
⭐ Then, remove brownie balls from the fridge and dip into the almond bark, using 2 forks to roll each ball until fully coated. Place back onto the parchment lined baking sheet.
⭐ Last, place each half of a gumdrop on either side of the ball to look like the snowman’s ear muffs. Use the cookie icing to pipe on a headband for the ear muffs, eyes, mouth and nose. Let set completely and enjoy.

Preparation
What kind of brownies are needed for snowman brownie bites?
Made from scratch or made from a box, it doesn’t matter for this recipe. We just need a pan of brownies to wrap around the cherries.
Do I need to put cherries in the center?
Nope, if you aren’t a cherry fan, go ahead and leave the cherries out and just roll the brownie up into a solid brownie ball.
What kind of white chocolate to use for the outside of the brownie bites?
Almond bark is the best option because it melts the smoothest. If you are in a pinch, white chocolate chips or white chocolate melts will also work.
Storage and leftovers
How long do snowman brownie bites last?
Store brownie bites in an airtight container for 3-5 days at room temperature or in the fridge for up to a week.
Can I freeze snowman brownie bites?
Yes, make sure the chocolate is completely set and store these between layers of wax paper in an airtight container in the freezer for up to 2 months.
Tips and tricks
✅ Want to skip the decorating? Dip into the chocolate and let set for a simple and tasty cherry brownie bite.
✅ Make the earmuffs out of whatever you have on hand, like mini marshmallows, chocolate chips, M&M’s, Reese’s pieces, or other small candies to create unique ear muff decorations.
✅ Skip the gumdrop ear muffs and use a mini Reeses cup or Rolo candy for a hat!
✅ We use store bought cookie icing for these because it hardens up and sets quickly.
✅ Make sure to cut the hardened edges off of the brownies. This will make it easier to wrap around the cherries.
Frequently asked questions
Can I use a different type of chocolate for coating instead of white almond bark?
While almond bark is recommended for its smooth melting, you can experiment with other white chocolates, but avoid white chocolate chips for dipping, as they may not melt as smoothly.
Can I use fresh cherries instead of maraschino cherries?
Maraschino cherries are recommended for their sweetness and stemless nature, but if you prefer fresh cherries, ensure they are pitted and consider adjusting the sweetness accordingly.
Can I make these snowman brownie bites in advance for a party?
Yes, you can prepare them in advance and store them in the refrigerator. However, it’s best to add the gumdrop ear muffs and icing decorations closer to serving to maintain freshness.
Can I use a different type of icing for decorating, or is cookie icing necessary?
While cookie icing is recommended for its quick setting, you can experiment with other icings. Keep in mind that some icings may take longer to set.
Can I add nuts or other mix-ins to the brownie mixture for extra flavor?
Feel free to customize the brownie mixture by adding nuts, chocolate chips, or other mix-ins to suit your taste preferences.

Snowman Brownie Bites
Ingredients
- 1 batch prepared brownies (about a 9x13" pan) from scratch, from a box, or store bought

- 1 pound white almond bark (you can also use white chocolate chips, or white candy melts)
- black and orange cookie icing
- 18 gumdrops halved, vertically
Instructions
- Remove any hard edges from the brownies then divide the remainder into 18 evenly sized squares.
- Place 1 brownie piece in your hand and place the cherry in the middle of the brownie. Form the brownie around the cherry and roll into a ball. Place brownie ball onto a parchment lined baking sheet. Repeat with remaining brownie pieces.
- Chill brownie bites in the refrigerator for 15 - 20 minutes.
- In a microwave safe bowl, heat the almond bark on high power in 20 second intervals, stirring between heat cycles, until almond bark is smooth and melted.
- Dip and roll chilled a brownie ball in the melted almond bark and place back onto a baking sheet. Place halved gumdrops either side of the brownie bite to look like ear muffs. Repeat for each brownie bite.
- Use cookie icing to draw headbands on the earmuffs, and the snowmen's eyes, mouth, and noses. Allow to fully set before serving.
