I’m not even going to try to humble brag today, I’m telling you straight up that this Fig and Blue Cheese Spinach Salad rocked my world.  Rocked. My. World.  Life changing, even.

I was originally going to do a cranberry blue cheese salad with leftover turkey (Thanksgiving inspired!), and maybe I still will later – but when I was walking through the produce aisle and saw figs, inspiration hit.  I’ve never had figs in a salad before, but it just seemed right.  And yes.  It was right. Sooooo right.

I made this salad in the middle of the night, as those of you who follow me on Facebook and Instagram already know, but I’m super excited to debut it at our next Friday pizza and movie night.

We’ll be showing the new Minions movie in the yard.  We saw it in the theater but since visiting Universal Studios last week, my kids are chomping at the bit to see it again.

We like to invite a couple friends over and set up the projector to play on the back of our garage (or over the pool in summer!).

Ingredients
 

  • Baby spinach leaves 3 cups // serving
  • Dried figs chopped, 1/4 cup // serving
  • Crumbled blue cheese 1/4 cup // serving
  • Crumbled bacon 1/4 cup // serving
  • Shredded chicken or turkey!, 1/2 cup // serving
  • Dressing suggestion: Bacon Maple Dijon Dressing

Instructions

  • Pile everything in a bowl or plate, and drizzle with dressing (I really very strongly suggest my Bacon Maple Dijon Dressing.  It's kind of fabulous.)
  • ENJOY!

  3. This looks so delicious that I know what I am having for dinner tonight. The only thing I would do is substitute the blue cheese with goat cheese. I find it tangier which I like and use on most salads.

    made the salad using rotisserie chicken minus the bacon cos i didn’t any. was very surprised how well the dried fig goes with the salad and the dressing, so simple and flavourful despite using only 3 ingredients. will be making this soon cos its really yummy. great recipe!!
