Follow along with my Easy Recipes Weekly Meal Plan and take the stress out of dinner!
Happy Easter! If you celebrate! Happy Sunday! If you don’t! We don’t celebrate in a religious capacity, but we do have friends over and toast the advent of Spring. Because, yay Spring! This afternoon, we served Pepperoni Pizza Baked Ziti, Slow Cooker Ham, and Roasted Asparagus. YUM.
We also had a small egg hunt in the back yard for the littlest ones. When the little kids were done, my husband set up a small scavenger hunt for the older kids which ended with them finding LEGO kits to put together. It was a pretty genius plan that kept them happy and occupied for a long time!
I’m pretty excited about the coming weeks, life should (hopefully) slow down a bit now that tax season is over – I always get really worked up during tax season because I keep the books for our personal lives as well as the three small businesses we run. It’s very daunting! But everything is turned over to the accountant as of last Friday, so I’m taking a majorly huge sigh of relief and looking forward to reallocating that accounting time to something more fun. Like cooking for you all!
Have you caught me live on Facebook yet? My goal is to make at least one regular appearance a week and do a recipe in real time for you. So far we’ve done Chicken Curry Lettuce Wraps, Three Ingredient Lemon Mousse, and Vanilla Butter Popcorn. I’d love if you joined in and said hello! In the meantime, I hope you love the meals we have planned for this week.
As always, leave a comment or send me a message with any thoughts or suggestions. I love to hear from you!

Every meal should end with something sweet. Maybe it's jelly on toast at breakfast, or a small piece of chocolate at dinner – but it always helps my brain bring a close to the meal. Leia @ Essential oil Diffuser judge
