Why You’ll Love This Recipe

These donuts with fruity pebbles are bright, cheerful, and surprisingly easy to make. The cereal soaks in the buttermilk first, which softens it and gives the donuts that sweet fruity flavor all the way through instead of just on top.

The texture is soft and cakey with a sweet vanilla glaze that hardens just enough to hold the cereal topping. They’re perfect for birthday breakfasts, sleepovers, brunches, or any day that ends in ‘Y’.

How To Make Fruity Pebbles Donuts

Start by preheating your oven and greasing your donut pan. (Our miracle pan release works great for this recipe).

In a large bowl, combine the Fruity Pebbles and buttermilk. Give it a quick stir and let it sit for a few minutes while you prep the other ingredients.

In a separate bowl, whisk together the flour, baking powder, and baking soda.

In the bowl with the cereal mixture, whisk in the egg, then add the oil, vanilla, Greek yogurt, and melted butter. Stir until everything is smooth and combined.

Gradually add the dry ingredients into the wet ingredients, stirring until you have a thick donut batter. Transfer the batter into the donut pan. Give the pan a gentle tap on the counter to help settle the batter and remove air bubbles.

Bake until the tops spring back lightly when touched.

Allow the donuts cool in the pan before removing them, and ,while they cool, whisk together the powdered sugar, milk, vanilla extract, strawberry extract, and pink food coloring until smooth.

Dip the tops of the cooled donuts into the glaze, then immediately sprinkle crushed Fruity Pebbles over the top before the glaze sets.

Tips & Tricks

  • If your glaze feels too thick, add milk one tablespoon at a time until you get the consistency you want. You want it thick enough to cling to the donuts but thin enough to dip easily.
  • The cereal topping sticks best right after glazing, so don’t wait too long before sprinkling it on.
  • A piping bag makes filling the donut pan much easier and less messy, but a zip top bag with the corner snipped off works well too.
  • If you don’t have strawberry extract, you can leave it out, but it adds a little extra fruity flavor that works really well with the cereal.

Storage Instructions

Store leftover donuts in an airtight container at room temperature for up to 4 days.

You can also freeze the unfrosted donuts for up to 3 months. Just thaw them completely and glaze before serving for the best texture.

Frequently asked questions

Do I need a donut pan to make these?

Yes, for the classic donut shape you’ll want a regular sized donut pan. If you don’t have one, you could try making these as muffins instead, though the baking time may need to be adjusted slightly.

Can I use a different cereal?

Absolutely! Cocoa Pebbles, Trix, or even Cap’n Crunch would all work well in this recipe. Just keep in mind the flavor and color will change.

Can I make these ahead of time?

Yes! You can bake the donuts a day ahead and store them unfrosted in an airtight container. Add the glaze and cereal topping before serving for the freshest look and texture.

Why do I soak the Fruity Pebbles in buttermilk?

Soaking the cereal softens it and helps infuse the batter with that sweet fruity cereal flavor throughout the donuts.

Can I freeze these donuts?

Yes, but freeze them without the glaze and cereal topping. Thaw completely, then glaze and decorate before serving.

What if I don’t have strawberry extract?

You can leave it out if needed. The glaze will still taste delicious, but the strawberry extract gives it an extra fruity bakery-style flavor.

How do I know when the donuts are done baking?

The tops should feel lightly springy when touched and the edges will look set. Be careful not to overbake or they can dry out quickly.

Can I use sour cream instead of Greek yogurt?

Yes! Either one works great in this recipe and helps keep the donuts soft and moist.
