Banana Bread Pudding Ingredients

  • Bread – Choose a hearty bread like a French bread recipe, challah, or a brioche, cubed. Day old or stale bread works great. 
  • Butter – Melted. We prefer salted butter but unsalted works too. 
  • Eggs – Large. 
  • Milk – Whole milk is best, but skim or fat free will work in a pinch. 
  • Sugar – White, granulated. 
  • Vanilla – Real vanilla extract. 
  • Cinnamon – Ground cinnamon. 
  • Salt – Regular table salt. 
  • Bananas – Ripe bananas, sliced. 
  • Glaze – Powdered sugar, vanilla extract, milk.

How do you make banana bread pudding? (step-by-step)

First, add bread and bananas to a greased baking dish.

Next, in a separate bowl or dish, lightly beat eggs. Add milk, sugar, melted butter, vanilla, cinnamon, and salt.

Then, pour custard mixture over bread stir gently until everything is wet. Bake until cooked through and browned. 

Finally, whisk together glaze ingredients and pour over top.

Slow cooker banana bread pudding recipe

Add ingredients to slow cooker, in the same manner as described for oven. Cover and cook on high for 2 – 3 hours or low for 4 – 5 hours.

To make a bananas foster version of your banana bread pudding, swap the white sugar for dark brown sugar and whisk a tablespoon of high quality dark rum into the milk + egg custard mixture.

Some great options are brioche, French bread, and challah. 

Is banana bread pudding served warm or cold?

This is totally a matter of taste, but I like mine warm and gooey, fresh from the oven.  Leftovers however, I typically enjoy cold from the refrigerator.  Delicious either way!

You can enjoy the leftovers cold, right out of the fridge if you like or you can microwave individual portions on high power in 1 minute increments. 

If reheating a larger portion, this can be done in the toaster oven or traditional oven. Set to 350F and heat until just warmed through.

Banana bread pudding is a deliciously gooey and decadent dish, perfect for dessert, breakfast, or brunch. Easy to make and always a hit!

Ingredients
 

  • 4 cups bread cubed (Use a hearty bread like French bread, brioche, or challah. Stale bread is fine.)
  • ¼ cup salted butter melted
  • 3 eggs large
  • 2 cups milk whole
  • ½ cup white sugar granulated
  • 2 teaspoons real vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup sliced bananas plus extra for garnish, if desired

Glaze

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

  • Place cubed bread and bananas in a greased 2 quart baking dish.
  • Note: we like the bananas sliced, but if you prefer you can use mashed bananas.
  • In a separate dish or bowl, lightly beat eggs. Add milk, sugar, melted butter, vanilla, cinnamon, and salt. Whisk to incorporate.
  • Pour custard mixture over bread and stir to wet all the bread. Bake, uncovered, at 375F for about 40 minutes until custard is cooked through and top is turning golden brown.
  • While pudding is baking, whisk together glaze ingredients. Allow pudding to cool for a few minutes before topping with fresh sliced bananas and glaze.
  • Serve warm or cold.
