How do you make chicken pot pie? (step-by-step)
⭐ First, place a layer of rolled out pie dough in the pie plate and carefully stretch over sides to cover completely.
⭐ Next, in a large skillet, sauté onion, carrots, and celery until onions are translucent. Stir in flour and seasonings; continue to cook.
⭐ Then, add broth and cream, stirring until thickened. Fold in chicken and peas.
⭐ Finally, spoon filling into pie dish, cover with remaining dough, and seal edges with a fork. Bake until crust filling is heated through and crust is golden brown.

What kind of vegetables in chicken pot pie?
Traditionally (and in this recipe) one would include carrots, peas, onion, and celery. That said, feel free to use this dish as a way to clean out your crisper drawer!
We’ve used squash, broccoli, potatoes, and cauliflower in the past and they’re all yummy.
Does chicken pot pie have crust on the top and bottom?
Whether to use only a top crust or a top and bottom crust for chicken pot pie is a matter of personal preference.
We like crust on both the top and bottom, but you can definitely skip the bottom one if you like!
Should I prebake the bottom crust?
If you like a crispier crust (say that three times fast!), you can par bake (also called blind baking) the bottom crust for 5 minutes before filling.
Bake 5 minutes, then remove and allow to cool completely before adding filling. Note that the top crust may not stick as well to the bottom crust if you pre-bake.
Storage and leftovers
Can you make a chicken pot pie ahead of time?
Absolutely! Prep it and then wrap tightly with foil or plastic wrap and store in the fridge for up to 2 days before baking. Add about 10 minutes extra bake time if baking directly from the refrigerator.
For longer storage, keep in the freezer.
How long does leftover homemade chicken pot pie last?
Leftovers will keep for 3 – 4 days. Cover tightly and store in the refrigerator.
Can you freeze a chicken pot pie?
Yes, this freezes very nicely. Prep the pot pie (but don’t bake). Cover tightly in foil, then again in plastic wrap. Keep in an upright freezer for up to 3 months and in a deep freezer for up to 6 months.
Thaw in the refrigerator, remove plastic and foil wrap, and then cook as directed. Alternatively, to cook from frozen, remove plastic wrap (but keep foil) and bake for one hour with foil on, then remove foil and bake as directed in recipe instructions.

Chicken Pot Pie
Ingredients
- ¼ cup butter salted
- ½ medium yellow or white onion diced
- 1 large carrot diced
- 1 large celery stalk diced
- ½ cup all purpose flour
- ¼ teaspoon dried thyme
- ¼ teaspoon rubbed sage*
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup chicken broth
- ½ cup heavy cream
- 2 cups cooked chicken shredded or cubed
- 1 cup frozen peas

Instructions
- Place one of the pie crusts in your pie plate it and gently stretch it over the sides to cover.
- Sauté the onion, carrot and celery in butter and cook until the onion is translucent, about 5 minutes.
- Stir in the flour and seasonings, and continue to cook another couple minutes.
- Pour in the chicken broth and the heavy cream, and simmer, stirring, until mixture has thickened (about 5 to 10 minutes).
- Stir in the cooked chicken and the frozen peas.
- Spoon the mixture into your prepared pie crust. Place the second pie crust on top and use a fork to crimp the edges together. Trim the excess off the sides, and vent the top.
- Bake at 400° F for 40 minutes, until filling is heated through and crust has turned golden brown.
- Remove from oven and allow pot pie to rest about 10 minutes before serving.
