Monster Cookie No Bake Bar Ingredients

  • Butter – Salted butter, softened to room temperature. 
  • Sugars – White granulated sugar and brown sugar. 
  • Peanut butter – Creamy peanut butter (or other nut or sun butter if substituting). 
  • Vanilla – Real vanilla extract. 
  • Flour – All purpose flour. 
  • Oats – Quick oats. 
  • M&M’s – Classic M&M’s. 
  • Topping – Heavy cream, semisweet chocolate chips, mini M&M’s or sprinkles.

How do you make no bake peanut butter oatmeal monster cookie bars? (step-by-step directions)

First, heat treat the flour by placing it in a microwave safe bowl, and microwaving in short increment until the flour reaches a safe temperature. Allow to cool.

Next, using an electric mixer, cream together the butter, sugar and brown sugar. Add in the peanut butter and vanilla and mix until smooth. Mix in the flour, then stir in the oats and the M&Ms. Press the dough into a lined 2 quart baking dish.

Then, pour the heavy cream into a microwave safe bowl with the chocolate chips, and microwave in 30 second intervals, whisking each time, until the chocolate chips have melted and the mixture is smooth and shiny.

Finally, spread the chocolate ganache over the prepared cookie dough and spread to the edges. If desired, sprinkle the mini M&M’s over the top of the chocolate. Chill until set.

These will keep at room temperature for 3 – 4 days or as long as a week in the refrigerator.  Make sure to store in an air tight container. 

Can you freeze monster cookie no bake bars?

Yes, these will keep in the freezer for 3 – 4 months.  If slicing before freezing, layer with parchment paper so they don’t stick together.

Thaw overnight in the refrigerator for best results.

Ingredients
 

  • ½ cup salted butter softened to room temperature
  • ½ cup white granulated sugar
  • ¼ cup brown sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon real vanilla extract
  • ½ cup all purpose flour

TOPPING:

  • cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • ¼ cup mini M&Ms optional

  • Mix in the flour, then stir in the oats and the M&Ms. Press the dough into a parchment lined 2 quart baking dish.
  • Pour the heavy cream into a microwave safe bowl with the chocolate chips, and microwave in 30 second intervals, whisking each time, until the chocolate chips have melted and the mixture is smooth and shiny.
  • Pour the chocolate ganache over the prepared cookie dough and spread to the edges. If desired, sprinkle the mini M&M's over the top of the chocolate.
  • Chill for 1 to 2 hours until set.
