- Meat – Ground pork sausage (or ground beef). We’re partial to mild or sweet sausage but spicy is delicious too.
- Cheese – Block American cheese (like Velveeta), cubed. Off-brand works just fine in this recipe but it does need to be American-style cheese.
- Rotel – Canned tomatoes and chilies. Many grocery chains have their own generic version.

⭐ First, in a large skillet brown the pork sausage over medium heat. Drain off excess grease.
⭐ Next, add the Rotel and Velveeta to the skillet.

Can you make sausage rotel dip ahead of time?
You can make the dip up to a couple days in advance and store it in a sealed container in the refrigerator. Reheat on medium-low heat on the stove top.
What type of meat for chili cheese dip?
We typically use mild ground pork sausage (or sometimes mild breakfast sausage – you’re going to have to trust me on this one!). But sweet or spicy Italian sausage is also yummy.
In a pinch you could also use ground beef, ground turkey, or ground chicken.
Make sure not to cook higher than medium heat and stir frequently until fully melted.
Storage and leftovers
Should rotel cheese dip be refrigerated?
Leftover dip should definitely be refrigerated. If the dip was left at room temperature in excess of two hours, leftovers should be discarded.
Can you freeze rotel dip?
To freeze the dip, allow it to cool completely then freeze in an air-tight container for up to several months. Thaw overnight in the refrigerator and reheat in a pot on the stove over medium heat.
Try adding more veggies like diced bell pepper or chopped spinach.

Ingredients
- 1 pound ground pork sausage or ground beef
- 16 ounces Velveeta cheese cubed
- 1 can Rotel Tomatoes with Chilies 10 ounces (NOT drained)
Instructions
- In a large skillet brown the pork sausage over medium heat, breaking it up into small bits with a spatula as it cooks.
- Drain excess grease and return skillet to stove top.
- Add the Rotel and the Velveeta to the skillet. Continue cooking, stirring frequently, until the cheese has melted and the dip is heated through.
Notes
- Brown ground sausage or beef in a skillet and drain off the excess grease.
- Add browned meat, cubed Velveeta, and Rotel to the slow cooker.
- Cover and cook on low for 2 - 3 hours.
- Stir before serving and whisk in milk or water to thin as necessary.
