Preparation
Can you make slow cooker meatball stroganoff ahead of time?
You could make the meatball mixture ahead of time and store in the fridge or freezer until ready to serve. Reheat in the crock pot or on the stove top. We recommend making the egg noodles fresh and mixing into the stroganoff when ready to serve.
What kind of meatball to use for slow cooker meatball stroganoff?
We used frozen meatballs to keep this recipe a simple dump-and-go meal but you can use homemade meatballs as well.
We recommend baking the meatballs first before adding them to the crock pot so they don’t fall apart while cooking in the crock pot.
What if I don’t like mushrooms?
You can leave the fresh mushrooms out if that isn’t your jam. You can also swap the cream of mushroom soup for any “cream of” soup that you have on hand; cream of chicken, cream of celery etc. Don’t let the mushrooms stop you from enjoying this easy weeknight dish!
Storage and leftovers
How long does slow cooker meatball stroganoff last?
Store any leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave, oven, or on the stove top.
Can this recipe be frozen?
Yes, let the stroganoff cool completely and store in a freezer safe airtight container in the freezer for up to 3 months. Thaw in the fridge and reheat in the oven or the crock pot.
Tips and tricks
✅ This recipe is typically made with egg noodles but you can serve it over any short pasta like rotini, penne, farfalle or even elbows!
✅ While the sauce and meatballs are cooking, make sure to give the mixture a good stir every now and then to prevent sticking and burning.
✅ We recommend regular sour cream for this recipe to get that really rich creamy sauce. Light or reduced fat will work in a pinch but try to use regular!
✅ Make sure to bake homemade meatballs first before adding to the crockpot. Raw homemade meatballs will likely fall apart in the slow cooker.
Frequently asked questions
Is there a substitute for sour cream in this recipe?
If you don’t have sour cream on hand or prefer a different option, you can substitute it with plain Greek yogurt for a similar tangy flavor and creamy texture.
Can I make this recipe vegetarian?
Yes, you can make a vegetarian version of this dish by using vegetarian meatballs or omitting the meatballs altogether and adding more mushrooms or other vegetables like bell peppers or zucchini.
How can I prevent the sour cream from curdling when adding it to the slow cooker?
To prevent the sour cream from curdling, try tempering it by stirring a small amount of the hot liquid from the slow cooker into the sour cream before adding it to the pot. This helps to gradually raise the temperature of the sour cream and prevent curdling.
If it does curdle or clump on you, it’s still good to eat, no worries!
