Peanut Butter Granola (with Chocolate Chips!)

Peanut Butter Granola is delicious and easy to make.  We like to add chocolate chips to our peanut butter granola!

P.S. This Peanut Granola just saved the day in our house. Recently we did a gluten-free trial run with my seven year old son.  One of the things he was most worried about missing out on was his pre-breakfast bowl of cereal. (Yes, you read that right).

Peanut Butter Granola Ingredients

  • Quick cooking 1 minute oats – Make sure you grab the quick cooking and not regular oats.
  • Applesauce – We use plain unsweetened applesauce.
  • Peanut butter – I am partial to chunky peanut butter, but you can use whatever kind you like.
  • Honey – Any kind of honey will do, we like to purchase local honeys
  • Mini dark chocolate or semi sweet chocolate chips – This is optional, but we love the combo of peanut butter + chocolate!
  • Olive oil – Regular vegetable oil will work as well.
  • Salt – I like a good coarse kosher salt, but use whatever you have on hand.

How do you make peanut butter granola?

First, combine applesauce, peanut butter, and honey in a bowl and beat with an electric mixer until fully blended.

Then, pour over oats and stir until the oats are all moistened. Place the mixture on a lightly oiled baking sheet, spread evenly.

Next, bake until granola is becoming nicely browned, tossing every 10 minutes. Remove from oven, toss the chocolate chips over top and give it a quick, gentle stir. Salt lightly, to taste.

Finally, set aside and allow to cool (this is when it will get crunchy). Store in an airtight container after it is fully cooled.

Peanut Butter Granola for Breakfast

My boys get up at a disgustingly early hour of the morning (and if we’re being honest, I hesitate to even call it ‘morning’), so they’re allowed to quietly fix themselves a bowl of cereal before dad gets up and makes them ‘real breakfast.’

The eight year old, being a good conscientious big brother (*ahem*) was quick to point out that all the cereals in our cabinet were chock full of gluten, and therefore off-limits.

But, if I’ve learned anything about being a parent, so much is about the spin you put on things.  Don’t want to eat broccoli?  But they’re tiny little trees and you’re the tree eating ogre!

  • Oil mister – This is the perfect gift for folks who want to make sure they know exactly what they’re spraying on their pans.  We like to put olive oil in ours, but you could use anything from vegetable oil, grapeseed oil, avocado oil, or whatever you like!  Just pump the top a few times and it sprays a fine mist of the oil you chose.
  • Bakers half sheet – It’s cool, we only have about six of these bakers half sheets because they’re good for absolutely everything.  Cookies? Yes! Steak? Yes! Cake? Oh yeh! Roasted veggies? Uhhhh huh!

Ingredients
 

  • 18 ounce container quick cooking 1 minute oats approximately 7 cups
  • 1 cup applesauce
  • 4 tablespoons peanut butter
  • 1/2 cup honey
  • 1/2 cup mini dark chocolate or semi sweet chocolate chips optional
  • olive oil
  • salt

Instructions

  • Combine applesauce, peanut butter, and honey in a bowl and beat with an electric mixer until fully blended.
  • Pour over oats and stir until the oats are all moistened.
  • Place mixture on a lightly oiled baking sheet, spread evenly.
  • Bake at 375 degrees for about 40 minutes, stirring/tossing every 10 minutes, until granola is becoming nicely browned.
  • Remove from oven, toss the chocolate chips over top and give it a quick, gentle stir. Salt lightly, to taste.
  • Set aside and allow to cool (this is when it will get crunchy). Store in an airtight container.
  • Enjoy as-is or in a big bowl with milk!

About oats:

  • According to a 2011 study published in the U.S. National Library of Medicine, oat beta-glucan, a dietary fiber found in oats, has cholesterol-lowering properties.
  • Oat consumption is associated with a 7 percent reduction in total “bad” cholesterol levels.
  • It’s also been shown that a diet containing oats can improve blood pressure control, and an increase in oats may significantly reduce the risk of cardiovascular disease.
  • In addition, a study done by the University Hospital Mannheim found that Type 2 diabetes patients who were given oatmeal as part of their diet achieved a 40 percent reduction in insulin dosage.

    Couple suggestions before making this!
    1-My granola came out a little dark, so I suggest once it looks dark enough just pulling it out even if it has only been 30 minutes.
    2- I also suggest adding more peanut butter if you want it to have that pb flavor. And more honey as well. This a very bland granola to me.
    3- Add your chocolate after it’s cooled off more or it will give your granola a bland taste.

    It is super simple and easy to change things up if you want to.
