White Chocolate Cranberry Oatmeal Cookie Ingredients

  • Butter – I prefer baking with salted butter, but unsalted works too. 
  • Sugar – Brown sugar and granulated white sugar.
  • Eggs – Large or medium. 
  • Vanilla – Real vanilla extract (not imitation).
  • Flour – All purpose (make sure it’s not self-rising flour). 
  • Baking soda – Not baking powder. 
  • Oats – Quick oats. 
  • Cranberries – Dried, sugar free if you can find them, but if not sugared is fine too. 
  • White chocolate chips – Chopped almond bark is also delicious.

How do you make White Chocolate Cranberry Oatmeal Cookies (Step-by-step)

First, using a stand mixer or electric hand mixer, cream together butter and sugar. Add eggs and vanilla and continue mixing.

Next, add in flour, baking soda, and salt, scraping down sides as needed. Add in oats, then stir in dried cranberries and white chocolate chips.

Then, form cookie dough into balls and place on cookie sheet.

Finally, bake until edges are a golden brown.

Can you make the cranberry oatmeal white chocolate chip cookie dough ahead of time?

Absolutely!  Wrap it tightly in plastic wrap (I like to do it in a tube or cylindrical shape) and then foil. Store in the refrigerator for up to 24 hours or in the freezer indefinitely. 

What can I use instead of white chocolate chips?

If white chocolate isn’t your jam, try chopped almond bark, vanilla chips, or even dark chocolate!

What can I use instead of cranberries?

This cookie is delicious with any kind of dried fruit. Try it with raisins, prunes, or even dried mango or apricot!

What else can I add to my white chocolate cranberry oatmeal cookies?

Nuts and seeds are also delicious in these cookies. Try walnuts or almonds (my personal favorite), or macadamia nuts (my husband’s favorite). Pumpkin seeds and pine nuts are also super yummy. 

Can you cook the dough from frozen?

Yes, you’ll just want to add an extra few minutes of bake time.

Storage and Leftovers

Can you freeze white chocolate cranberry oatmeal cookies?

You can freeze these either before or after baking. If you are freezing before baking, make the dough into a tube/snake/cylindrical shape and then wrap it tightly in plastic wrap and then again in foil. Alternately, you can freeze in pre-portioned dough balls with parchment layered between. 

To freeze baked cookies, allow them to cool, then store in a freezer safe container separating the layers with parchment paper, for up to 3 months. 

How long do the cranberry oatmeal white chocolate cookies last?

They will keep for about 3 days at room temperature in a sealed container, up to a week in the refrigerator, and up to 3 months in the freezer.

Tips and tricks

🍪 For chewy cookies, make sure not to over-bake.  They should still feel soft coming out of the oven and edges only slightly browning. 

🍪 If you love a crisp cookie, add 3 – 5 minutes additional bake time. 

🍪 Use parchment paper or a silicone baking mat to make sure the cookies don’t stick.

Ingredients
 

  • 1 cup butter
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking soda
