This Easy Italian Antipasto Salad was inspired by my Apple, Blue Cheese, and Walnut Salad. Also by my Italian grandmother. (Miss you so much, Dreena!). When we did a quick fried chicken dinner, the salad was such a great addition that I wanted to do another! This time I served pizza and it brought to mind all the yummy cured meats and pickled veggies my grandmother would set out before a big Italian meal, so of course I thought an antipasto (which I will forever incorrectly call antipasta) inspired salad would hit the spot. And it did!
This salad is quick to come together with almost no prep and tastes as bright and refreshing as it looks. It can be served as a meal on its own or to complement to family pizza night like we did, for an effortless meal. Even if it doesn't bring back childhood memories for you, it will still taste delicious!
Easy Italian Antipasto Salad, Ingredients:
- Lettuce, I prefer a Spring Mix
- Red onion, thin sliced
- Olives, assorted
- Cured meats (I used salami, prosciutto, and pepperoni)
- Pickled red pepper
- Creamy Italian Dressing (you can buy a dressing, but this one is better *hint hint*)

We grabbed a Marketside 5 Cheese Pizza and two liter of Coca-cola from Walmart to make our Italian dinner night complete.
