  • Nuts – Dry roasted or cocktail peanuts, salted.
  • Sugar – White granulated sugar.
  • Syrup – Corn syrup.
  • Butter – Plain, not salted.
  • Vanilla – Real vanilla extract will give you the best flavor!
  • Baking Soda – This is what creates a reaction and aerates the brittle.

How do you make peanut brittle in the microwave? (step-by-step directions)

First, combine sugar and corn syrup in a microwave safe bowl and melt together in the microwave. Carefully remove and stir in the peanuts. Microwave again.

Next, add the vanilla and butter and stir the mixture. Microwave again and stir in the baking soda until it is foamy.

Then, pour mixture onto a cookie sheet lined with parchment paper. Let the mixture set.

Finally, once set, pick up the parchment paper and drop onto the counter to crack the brittle.

When microwaving the peanut brittle, the mixture and the bowl will be extremely hot! Make sure to use oven mitts or hot pads and be extra cautious when removing from the microwave and stirring in the ingredients.

How long do I microwave the peanut brittle mixture?

Microwaves can vary a lot depending on brand and age. Your microwave may run hotter or cooler so we recommend doing a test run to see if the timing in the recipe works for you. We found 3 minute increments to work well for us. 

What kind of nuts do I use?

You can use either dry roasted or cocktail peanuts but we recommend that they are a salted variety. If you want to change up the flavors you can also make this with cashews or almonds!

Do I need to refrigerate the peanut brittle?

No, peanut brittle will actually become soft if stored in the fridge. Store at room temperature for best results!

How do I store microwave peanut brittle?

Store them in an airtight container as they can get sticky if left out too long. We like to store the pieces layered between parchment paper for easy removal.

✅  If your peanut brittle is too thick, use a larger cookie sheet to let it spread out further.

✅  Try dipping the peanut brittle in chocolate after hardening for an extra sweet treat!

Ingredients
 

  • 1 ½ cups dry roasted or cocktail peanuts
  • 1 cup white granulated sugar
  • ½ cup corn syrup
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  • Line a cookie sheet with parchment paper and set aside.
  • In a microwave safe glass bowl or 4 cup pyrex measuring cup combine the sugar and corn syrup. Microwave on high power for 3 minutes.
  • Carefully remove and stir in the peanuts. (Use hot pads or gloves, the bowl will be very hot).
  • Return to the microwave and cook on high power for an additional 3 minutes. Carefully remove from the microwave and add in the vanilla and butter. Stir to combine.
  • Return to the microwave and cook on high power for an additional 2 minutes. Carefully remove from the microwave and quickly stir in the baking soda until foamy.
  • Pour peanut brittle mixture out onto the parchment lined cookie sheet. Don’t spread the candy, allow it to set for 1 hour.
  • Once the brittle is set, pick up the parchment paper and drop in on the counter to crack the candy.
