40 Clove Garlic Chicken Ingredients
- Chicken – We used boneless skinless chicken thighs in the pictured recipe (it was on sale!) but you can use any cut of chicken for this recipe. My personal preference is bone-in skin-on chicken thighs.
- Oil & Fat – Olive oil and butter for the skillet.
- Garlic – Fresh cloves of garlic, peeled.
- Shallots – Finely diced.
- Seasonings – Salt, pepper, Italian seasoning and fresh thyme sprigs.
- Wine – We used our favorite dry white wine for this one!
- Broth – Chicken broth is what we used but you could also use vegetable broth.
How do you make chicken with 40 cloves of garlic? (step-by-step directions)
⭐ First, pat chicken thighs dry with a paper towel and season both sides with salt and pepper. Heat oil and melt butter in an oven safe skillet or dutch oven. Place chicken thighs in the pot and cook until browned. Remove from pot and set aside.
⭐ Next, add the garlic, shallots and Italian seasoning to the pot. Cook, stirring, until the onions are soft and garlic is fragran
⭐ Then, pour in the white wine to deglaze the pot. Add the chicken broth, simmer, and reduce the liquid by half.
⭐ Finally, return the chicken to the pot and add sprigs of fresh thyme if desired. Cover and bake!

Really, any cut of chicken will work for this recipe. We used boneless skinless chicken thighs but this recipe is phenomenal with bone-in skin-on chicken thighs. You could also use boneless skinless chicken breasts if that’s what you love!
How do I keep my chicken from drying out?
Using a digital meat thermometer is the key to making perfect chicken every time. You want to make sure you pull the chicken out as soon as it hits 165F. Allow the chicken to rest for at least 5 minutes after it’s done cooking before cutting into it.
How many bulbs of garlic do I buy for 40 cloves of garlic?
So, you don’t REALLY need to count out 40 cloves of garlic for this recipe. We recommend using the cloves from 3 full bulbs of garlic.

Ingredients
- 6-8 chicken thighs
- salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 40 cloves garlic (about 3 bulbs) peeled
- 1-2 shallots finely diced
- 1 teaspoon Italian seasoning
- ½ cup dry white wine or white grape juice
- ¾ cup chicken broth or stock
- fresh thyme sprigs optional
Instructions
- Pat the chicken thighs dry with a paper towel, season both sides with salt and pepper.
- Heat the oil and melt the butter in an oven safe skillet or dutch oven over medium high heat. Place the chicken thighs in the pot and cook for about 5 minutes on each side, until browned. Remove from pot and set aside on a clean plate.
- Add the garlic, shallot, and Italian seasoning. Sauté, stirring constantly, for about 3 - 5 minutes, until the onions are soft and the garlic is fragrant.
- Pour in the white wine to deglaze the pot. Add the chicken broth, bring to a simmer, and continue simmering until liquid is reduced by half, about 5 minutes.
- Return the chicken to the pot, nestling the thighs between the cloves of garlic. If desired, add some fresh sprigs of thyme. Cover, and cook in a preheated 350℉ oven for 30 minutes, until chicken reaches a safe internal temperature of 165℉.
