I’m a firm believer that sometimes you have to step outside your comfort zone. And vegan is definitely outside my comfort zone. I mean, cheese. Amiright? But when I was making my favorite fall comfort food the other day (chili, duh) I thought this would be the perfect candidate for a dip into the world-o-vegan. I mean, you know, a short vacation. (I’m not giving up my steak.)
This Vegan Pumpkin Chili is savory, delicious, and filling. It’s everything I didn’t realize vegan could be, yay! I put together a Fall inspired party and this chili was the big star! I would definitely encourage you to try something new, that wouldn’t normally be on your radar. Maybe something from the weekly menu plan, or hey! Maybe this chili!
Vegan Pumpkin Chili
Ingredients
- 1 can pure pumpkin 15 ounces
- 1/3 cup chili seasoning or one 1.25 ounce packet
- 1/8 teaspoon cinnamon
- 1 cup vegetable stock
- 12 ounces Grillers Crumbles
Instructions
- Combine pumpkin, chili seasoning, cinnamon, and vegetable stock in a pan and bring to a light simmer over medium heat, stirring occasionally.
- Add Grillers Crumbles and heat through.
- Serve and ENJOY!

Serving suggestions:
For our Fall inspired tablescape we used a background of craft paper and made a quick pennant banner with festive orange and purple scrap-booking pages. I grabbed a pretty glass-less picture frame to add some height, and to set the mood we set out colorful maple leaves, a brightly colored bouquet of flowers, along with some cute decorative gourds.
We served apple cider with cinnamon sticks, fresh dinner rolls, MorningStar Farms Veggie Corn Dogs, Vegan Pumpkin Chili, and of course candy corn! I got it all on a quick target run (along with a few other things, of course).
It’s not actually cold here yet, but I turned the air down a few extra notches so we could wear flannel and sweaters while enjoying our company and watching the Sunday afternoon football games.
