It's cookie exchange season, but if you've been reading this site for any period of time, you know that I'm not a baker. It's just not a skill I have perfected (although, I'd love to get around to it some day!). As such, I'm a huge fan of boxed cookie mixes. The thing about it is, I'm never able to leave well enough alone. Mixes provide such a fun canvas for experimenting. I know I've got the base cookie taken care of (or cake, or roll, you get the idea), so I'm always wanting to see what we can do to take it to the next level!
Tonight, with my handsome dad in the kitchen giving me a history lesson (I've really grown to love social studies in my 30's!), I whipped up these yummy Raspberry Cream Cheese Filled Sugar Cookies. They were so easy to prepare and super yummy to eat. Yay! I made a batch of 20 cookies from one mix packet, but when I make them again, I'll do more like 35. These were fantastic, but I made a cookie rookie mistake and forgot how much they grow in the oven!
Raspberry Cream Cheese Filled Sugar Cookies, Ingredients:
- 1 batch prepared sugar cookie dough
- Cream cheese icing
- Raspberry preserves
Raspberry Cream Cheese Filled Sugar Cookies, Directions:
- Form dough into balls, and make a depression in the center (I used the handle of my rolling pin).
- Fill the depression half with cream cheese icing and half with raspberry preserves.
- Bake according to cookie dough directions.
For my cookies I used the Pillsbury™ Purely Simple Sugar Cookie Mix - you just add butter and an egg. So easy and they came out delicious.
For the cream cheese icing, I used Pillsbury™ Purely Simple Buttercream Frosting Mix and halved the amount of water, and also added one ounce of softened cream cheese. It was perfection!
