I wasn't much of a school lunch eater. It's probably hard to believe given the path that I've taken and my job these days, but as a kid, going through the lunch line gave me so much anxiety. I was constantly worried I would say the wrong thing, get the wrong food, or not have enough money. Serious anxiety. So imagine my surprise when on my oldest's first day of kindergarten he came home with his lunch untouched and said "oh, I decided I'd rather go in the lunch line!" Hah! Where did that kid come from?
There were always one or two days a month where I would make an exception, throw caution to the wind and brave the lunch line . One of those days was Mexican Pizza Day.
After seeing the most amazing looking Mexican Pizza Recipe at Domestic Superhero, I knew we needed to make them at home. But I have a billion kids. And I wanted to be able to serve it to a crowd for game day. So we super-sized it. And added beef. Because, beef.
This comes together much like a lasagna - honestly I struggled with how to name this recipe. Is it a Mexican Lasagna, a Deep Dish Mexican Pizza, an Enchilada Casserole - I don't know. I just don't know. What we do know is that it's delicious.
This recipe makes a massively huge dish, perfect for a party, a large family, or for freezing several portions to enjoy later. You can choose to freeze the entire pan uncooked, or bake the whole thing and then freeze individual portions for later. Either way works great! If you freeze the whole pan, make sure to use a disposable pan so you're not without a roaster while it's occupied.
We used my giant 16" x 13" roasting pan. It made enough to feed all seven of us (two adults, five kids) and still put some in the freezer for another dinner. I served it with Black Bean Soup, and fresh Pico de Gallo. The recipe can easily be halved or quartered for a smaller crowd.
Despite the fact that I know virtually nothing about the game of football, I'm always excited for the season to begin and sad when it comes to close. My husband and kids are rabid football fans so it's a wonderful excuse to have friends over, eat together, and enjoy good company. And while I love (love, love, love) feeding people - it's not fun to be slaving over the stove while folks are enjoying your party. So, being able to have a delicious dish like this prepared ahead of time is perfect.
We used Rosarita Traditional Refried Beans from Walmart, they are original-recipe Mexican-style refried beans - authentic and delicious! You can spread them directly from the can, or heat them up first to make it a little easier.
Deep Dish Mexican Pizza Bake Recipe, Ingredients:
- 1 pound ground beef
- 1 taco seasoning packet
- 1 cup water
- 21 large flour tortillas, halved
- 2 cans Rosarita Traditional Refried Beans
- 2 cans red enchilada sauce
- 3 cups diced tomato
- 4 - 6 cups shredded Mexican blend cheese
- 1 - 2 cups fresh green onion or cilantro, chopped (I used both)
Deep Dish Mexican Pizza Bake Recipe, Directions:
- On the stovetop, brown then drain the ground beef. Return it to the stove, add water and taco seasoning packet. Stir and simmer until water has cooked off and meat is seasoned.
- In a 16" x 13" roasting pan, layer tortillas, refried beans, ground beef, another layer of tortillas, enchilada sauce, tomatoes, cheese, and green onion/cilantro. Repeat two more times.
- Bake uncovered at 350 degrees for about one hour, until everything is heated through and cheese is melted and bubbly.
