Amish Macaroni Salad Ingredients

  • Pasta – We use elbow macaroni in this recipe. 
  • Eggs – Large, hard boiled. (Here’s how we make classic hard boiled eggs and here’s how we hard boil eggs in the instant pot). 
  • Celery – Chopped or small diced. 
  • Bell pepper – We used red bell pepper for a pop of color, you could also use green, yellow, or orange. 
  • Relish – Sweet pickled relish. 
  • Whipped dressing – Like Miracle Whip. 
  • Mustard – Classic yellow mustard. 
  • Sugar – White, granulated. 
  • Vinegar – Plain white vinegar. 
  • Salt – Regular table salt.

How do you make Amish macaroni salad? (step-by-step)

First, prepare macaroni noodles to al dente, according to package instructions. Drain and rinse with cool water. 

Then, dice vegetables. In a medium sized bowl whisk together dressing, mustard, sugar, vinegar and salt.

Next, stir eggs, onion, celery, red pepper, and relish into the sauce. Add macaroni noodles to a large bowl and fold in dressing mixture until fully combined.

Finally, chill before serving.

Can you make Amish macaroni salad ahead of time?

Yes, in fact it need to chill for at least 2 hours before serving but is even better if kept in the refrigerator overnight. 

Miracle whip or mayonnaise in Amish macaroni salad?

The recipe as written calls for Miracle Whip, but you can substitute regular mayo if preferred. 

What kind of relish in Amish macaroni salad?

Traditionally sweet relish is used, but if you like more tartness then feel free to use dill relish instead, or a combination of both. 

Can I skip the sugar?

If you prefer a less sweet salad, you can skip or reduce the amount of sugar added.

How long does Amish macaroni salad last?

Leftovers will keep for 3 – 4 days. If the salad was left out at room temperature longer than 2 hours, discard any leftovers. 

For best results, store covered in the refrigerator. 

Can you freeze Amish macaroni salad?

Technically, yes, but we don’t recommend it as the noodles will likely become mushier and the dressing could separate. 

If you do freeze the leftovers, allow them to thaw overnight in the refrigerator before serving again.

Tips, tricks, and frequently asked questions

Make it less sweet

Amish macaroni salad is traditionally quite sweet, but if you want to bring that down a notch you can swap the sweet relish for dill pickle relish, use mayonnaise instead of Miracle Whip, or use less (or no) white sugar. 

Make it spicy

Add a dash of sriracha or some diced pickled jalapenos for a kick!

Make it gluten free

Use gluten free pasta or swap the pasta for cooked/chopped potatoes.

Ingredients
 

  • 2 cups pasta (8 ounces) we used elbow macaroni
  • 3 large eggs hard boiled
  • 1 onion small white, chopped
  • 2 stalks celery chopped
  • 1 bell pepper small red, chopped
  • 2 tablespoons relish sweet pickle
  • 2 cups whipped salad dressing like Miracle Whip
  • 2 ½ tablespoons mustard classic yellow
  • ¾ cup sugar white granulated
  • 2 ¼ teaspoons vinegar white
  • ¼ teaspoon salt

Instructions

  • Cook pasta to al dente, drain, rinse with cool water.
  • In a large bowl whisk together the salad dressing (Miracle Whip), mustard, sugar, vinegar and salt. Mix in hard boiled eggs, onion, celery, red pepper, and relish.
  • Fold in cooked noodles and gently stir until fully combined.
  • Chill at least 2 hours (but overnight is best!).

Calories are automatically generated. For best results calculate based on your exact ingredients.
INSTANT POT DIRECTIONS:
  • Add pasta + 2.5 cups of water to the instant pot. Stir. Cook on manual (high pressure) for 4 minutes. Do a careful quick release, pausing if it begins to sputter.
  • Drain pasta and rinse with cool water, continue with recipe as written above. 
  • You can also add eggs to pot to cook at the same time if desired.
