Ingredients

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup honey
  • ½ cup yellow mustard
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch

Instructions

  • Place the chicken into the slow cooker and season with salt, black pepper, and garlic powder.
  • In a bowl, whisk together the honey, yellow mustard, Dijon mustard, apple cider vinegar, and cornstarch until smooth.
  • Pour the honey mustard mixture over the chicken, making sure the chicken is fully coated, including underneath.
  • Cover and cook on low for 4–5 hours, until the chicken is tender and cooked through.
  • Turn off the slow cooker and shred the chicken (I like to use an electric hand mixer on slow to easily shred the chicken). Stir to coat the chicken in the sauce.
  • Allow the chicken to sit, uncovered, for 5–10 minutes to allow the sauce to thicken before serving.

Recipe Notes
  • Dijon mustard adds a deeper flavor—don’t skip if possible.
  • Letting the chicken rest in the sauce after shredding helps it thicken naturally.
  • If sauce is too thin, cook uncovered for an additional 10–15 minutes.
  • Great served over rice, mashed potatoes, or roasted vegetables.

Frequently asked questions

Can I use chicken breasts instead of thighs?

Yes! Both work great. Thighs are a bit more juicy, but breasts will still be tender and delicious.

Can I make this ahead of time?

Absolutely. It reheats really well, so it’s perfect for meal prep.

How do I thicken the sauce more?

Let the chicken sit in the slow cooker for 5–10 minutes after shredding, or cook uncovered for a bit longer to reduce.

Can I cook this on high instead of low?

You can cook on high for about 2–3 hours, just until the chicken is fully cooked and tender.

What should I serve this with?

Baked rice, mashed potatoes, or roasted vegetables are all great options for soaking up that sauce.
