Why You’ll Love These Slow Cooker Pork Chops

The combination of garlic and brown sugar creates a rich, savory-sweet sauce that coats the pork chops beautifully as they cook. No cream soups, no packets—just straightforward ingredients that work.

Ingredients You’ll Need
- Pork chops (we prefer bone-in)
- Salt and pepper
- Vegetable oil
- Fresh garlic
- Brown sugar
That’s it. Simple pantry staples that come together in the best way.

Step-by-Step Directions
- Start by seasoning the pork chops with salt and pepper on both sides. Heat vegetable oil in a large pan over medium-high heat and sear the pork chops for on each side, just until they’re nicely browned. (You can skip this step if you’re in a real time crunch, but we love the flavor it adds!)
- Transfer the pork chops to your slow cooker, then sprinkle the minced garlic evenly over the top. Finish by sprinkling the brown sugar over the pork chops.
- Cover and cook on low , until the pork is tender and cooked through. Serve warm and spoon some of that garlicky brown sugar sauce over the top.

Tips & Tricks for Crock Pot Pork Chops
- Don’t skip the sear – it adds flavor and helps lock in moisture
- Bone-in chops work best for tenderness in the slow cooker
- Store leftovers in an airtight container in the fridge for 2–3 days
- Serve with mashed potatoes, baked rice, or roasted cauliflower to soak up the sauce
Perfect for Busy Days
This is the kind of recipe you can throw together in the morning and come home to a comforting, homemade dinner without any extra effort. It’s simple, reliable, and exactly the kind of meal that earns a permanent spot in the dinner rotation.

How to Make Slow Cooker Pork Chops

Slow Cooker Pork Chops Recipe
Ingredients
- 6 pork chops ½ thick (we used bone-in)
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 teaspoons vegetable oil (skip if you're not browning the chops)
- 6 cloves of garlic minced
- ½ cup brown sugar
Instructions
- Add vegetable oil to a large pan and bring to medium high heat. While pan is heating, season the pork chops on all sides with salt and pepper.
- Brown the pork chops in your heated pan, about 1 – 2 minutes on each side. Then place browned pork chops into slow cooker.
- Top the pork with garlic and brown sugar, then cover and set slow cooker to low. Cook for 6 hours and serve with your favorite sides.
Notes
- Pork chops: Bone-in pork chops work best and stay the most tender in the slow cooker but boneless can also be used.
- Searing: This adds flavor and texture, but can be skipped if you’re in a rush.
- Thickness matters: This recipe is written for ½-inch thick pork chops. Thicker chops may need a little extra time.
- Garlic: Fresh minced garlic gives the best flavor, but jarred garlic works in a pinch.
- Storage: Store leftovers in an airtight container in the refrigerator for 2–3 days.
