Raisin Bran Cookies are easy to make and taste amazing!  Chewy and delicious, they’ll be your family’s new favorite cookie!Raisin Bran Cookies are chewy, soft, and drizzled with a yummy sweet milk icing. It’s like all your favorite parts about breakfast wrapped up into a tasty dessert.You can make them in a cookie form or a bar form (I’m team cookie and my husband is team bar!).  They were inspired by our popular Ginger Cookies and should definitely be served with a cold glass of milk or maybe some peppermint mocha for the adults.RAISIN BRAN COOKIES

Raisin Bran Cookies – Ingredients

  • Raisin Bran cereal – Raisin Bran cereal gives this cookie a delicious chewiness with just a touch of crunch and yummy sweet raisins.
  • All purpose flour – Make sure you don’t accidentally get self rising flour. If self rising is all you have, then skip the baking soda and salt.
  • Cinnamon – Cinnamon adds a warmness to this cookie that makes you feel like snuggling up on the couch with a good book.
  • Baking soda – baking soda is used for leavening.  These cookies aren’t big and tall, but the baking soda gives them a little rise.
  • Salt – A touch of salt elevates all the flavors in this cookie.
  • Butter – I like to use salted butter in addition to the small amount of salt, but if you only have unsalted it will still taste great.
  • Sugar – Regular granulated sugar for inside the cookie.
  • Egg – One egg is perfect for this recipe, we’re going for a dense chewy result. Yum!
  • Molasses – Molasses are the secret ingredient to this cookie, definitely don’t skip it.

Raisin Bran Cookie Icing – Ingredients

  • Powdered sugar – Powdered sugar icing is my favorite way to ice cookies. So easy and so good.
  • Milk – Make sure to add the milk to your sugar very slowly and mix as you’re doing it.  It’s very easy to add too much milk!
ICING FOR RAISIN BRAN COOKIES

How Do You Make Raisin Bran Cookies

First, combine all of the cookie ingredients in a large bowl and mix well with an electric mixer.⭐ Then, drop cookie dough onto a silpat or parchment lined baking sheet. Optional: press additional raisins into top of cookies/bars.⭐ Next, bake about  10 – 12 minutes. The cookies will darken because of the molasses, this doesn’t mean they’re overdone!⭐ While cookies are baking, whisk together confectioners sugar and milk, adding the liquid slowly, until you reach desired consistency.⭐ Finally, allow cookies to cool completely, then drizzle with icing.

You can make Raisin Bran cookie dough ahead of time. Ingredients
 

Cookies

  • 1 ½ cups gently crushed Raisin Bran
  • 1 ¾ cups all purpose flour
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • ¾ cup butter softened
  • 1 cup sugar
  • 1 egg
  • ¼ cup molasses
  • Optional: extra raisins

Icing

  • 1 cup powdered sugar
  • 1 - 2 tablespoons whole milk

Instructions

  • Combine all of the cookie ingredients in a large bowl and mix well with an electric mixer.
  • For cookies: drop onto a silpat or parchment lined baking sheet (makes about 36 cookies).
  • For bars: Press into a parchment lined baking pan (minimum size 8x8).
  • Optional: press additional raisins into top of cookies/bars.
  • Bake at 350 degrees 10 - 12 minutes for cookies, and 15 - 20 minutes for bars (this will depend on how thick you make your bars).
  • While cookies/bars are baking, whisk together confectioners sugar and milk, adding the liquid slowly, until you reach desired consistency.
  • Allow cookies/bars to cool completely, then drizzle with icing.
