Sesame Noodles Ingredients

  • Noodles – We like Chinese noodles, but you can use whatever kind of pasta you prefer.  Ramen works great as do rice noodles, lo mein noodles, soba, and even spaghetti or our homemade egg noodles in a pinch. 
  • Soy sauce – I’m partial to low sodium soy sauce. 
  • Tahini – This is a sesame paste that is often found in the Asian or Greek section of your market, or near the condiments (by the pickles and olives). 
  • Oil – Sesame oil. The combination of the oil, tahini, and seeds are what give this its signature sesame flavor. You can substitute olive oil or a mild vegetable oil, but it will change the flavor of the dish. 
  • Vinegar – Rice vinegar. Apple cider vinegar would be the closest substitute. 
  • Garlic – Minced.  Fresh garlic is best in this recipe. 
  • Ginger – Grated. Fresh ginger is preferred in this recipe. 
  • Garnishes – Green onions, sesame seeds.

How do you make sesame noodles? (step-by-step directions)

First, prepare noodles to al dente, according to package directions. If making cold sesame noodles, transfer to a bowl of ice water as soon as they’re done. 

Then, while the noodles are cooking, whisk together the soy sauce, tahini, sesame oil, rice vinegar, garlic, and ginger in a large bowl. 

Next, drain noodles and add to large bowl, toss with sauce to coat. 

Finally, garnish with sesame seeds and green onion.

Double the sauce ingredients if you like your noodles really wet or if you’re adding a lot of veg and protein.

Preparation

Cold sesame noodles

This recipe can be served cold or hot! If you prefer it cold, transfer the noodles to a bowl of ice water immediately after cooking, then drain and add sauce as directed. 

If you’re prepping for later, cool the noodles off in ice water, then drain and toss with a small amount of mild oil to keep them from sticking. Refrigerate and then toss with the sauce and garnish when ready to serve. 

What can I substitute for tahini?

While not a true substitute, if you don’t have or prefer not to use tahini in this recipe, creamy peanut butter works well and tastes amazing. 

Can you make sesame noodles ahead of time?

Yes, drain noodles and toss with a small amount of mild oil to keep them from sticking. Refrigerate and then mix with the sauce and top with garnish when ready to serve.

Storage and leftovers

How long do sesame noodles last?

Leftovers will keep in the refrigerator for 3 – 4 days. Allow them to cool before storing and always cover tightly so the noodles don’t dry out. 

What is the best way to reheat sesame noodles?

I like to add a little bit of water and reheat them in a skillet over medium heat.  You can also microwave on high power in 30 second increments until your desired temperature is reached.

🧮 If you love sauce, definitely double the sauce portion of the recipe to make it nice and saucy!

🥦 Try adding veggies like broccoli, bell peppers, leeks, bok choy, and different mushroom varieties. 

🥜 Swap some or all of the tahini for creamy peanut butter for a peanut butter sesame noodle recipe. 

🧊 Enjoy this dish chilled on warm days as a cold noodle salad. Top it with crunchy noodles or a handful of uncooked ramen.

Ingredients
 

  • 10 ounces chinese noodles/ramen
  • ¼ cup soy sauce
  • ¼ cup tahini
  • 3 tablespoons sesame oil
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2-3 cloves garlic finely minced (about 2 teaspoons)
  • 1 teaspoon grated ginger
  • ¼ cup warm water water
  • toppings green onion, sesame seeds

Instructions

  • Cook noodles to al dente, according to package directions. Drain. (If serving cold, transfer to a bowl of ice water then drain again).
  • While the noodles are cooking, whisk together the remaining ingredients.
  • NOTE: If you like really saucy noodles (*raises hand*), double the sauce ingredients!
  • Add the drained noodles to the sauce and toss to coat.
  • Serve with sesame seeds and sliced green onions.
