On day 20 of the Whole30 we took a family trip to the YMCA gym and I beat my old record on the elliptical. So, that was fun. Okay, maybe not *fun* but it felt like a nice step forward. Also, an unintended (awesome) consequence of this program is that we’re sitting down to eat together as a family nearly every night. I love this. So often I brush off eating together because as a consequence of homeschooling and working from home, we’re together allllll the time. But turns out, it’s actually really nice to sit and have a meal together more than a couple nights a week, rather than zoning out in front of the boob tube most evenings.
Breakfast:
Trail mix (walnuts, raisins, sunflower seeds, coconut chips), and black coffee.
Lunch:
Leftover red thai curry with cauliflower, sweet potatoes, and chicken thighs.
Dinner:
Whole roasted chicken with roasted carrots, and watermelon.
