Yes, this pie is delicious served warm but it is also delightful served cold. You can make impossible pie a day ahead and serve it straight from the fridge.

What is Impossible Pie, and why is it called that?

Impossible Pie is a coconut-flavored custard pie that creates its own crust during the baking process, making it seemingly impossible to mess up. The name comes from the fact that the pie separates into distinct layers as it bakes, resulting in a pie with a top and bottom crust.

Frequently asked questions

Can I use sweetened shredded coconut instead of unsweetened?

While the recipe calls for unsweetened shredded coconut, you can use sweetened shredded coconut if that’s what you have on hand. However, keep in mind that using sweetened coconut will make the pie slightly sweeter than the original version.

Is Bisquick the only option for the magic crust?

If you don’t have Bisquick or prefer not to use it, there are alternative ways to achieve the magic crust. You can substitute Bisquick with an equal amount of all-purpose flour combined with a pinch of baking powder and a pinch of salt. This should still yield a similar result.

Can I add other mix-ins to the pie?

Absolutely! While the recipe is delightful as it is, you can get creative and add your favorite mix-ins to customize the pie. Some popular additions include chocolate chips, chopped nuts, dried fruit, or even a swirl of fruit preserves.

Can I use a different type of milk?

The recipe recommends using whole milk for the best results, but you can use other types of milk if necessary. Skim milk, 1%, or 2% milk will also work, but keep in mind that the richness and creaminess of the pie may vary slightly.

How do I know when the pie is fully cooked?

To determine if the pie is cooked thoroughly, insert a knife or toothpick into the center of the pie. If it comes out clean or with only a few moist crumbs, the pie is done. Avoid overbaking, as it may result in a dry pie.

Can I use a different type of extract for flavoring?

The recipe calls vanilla extract. However, you can experiment with other extracts, such as almond or coconut extract, to enhance the flavor profile of the pie.
