These Strawberry Brownies are soft, chewy, buttery, and packed with sweet strawberry flavor in that nostalgic strawberry-shortcake-ice-cream-bar kind of way. And the glaze on top? Ridiculously good.

The best part is they only take a handful of ingredients and about half an hour from start to finish. My daughter loves to make them as an after school treat.

Why You’ll Love These Strawberry Brownies
These are one of those desserts that look bakery-worthy but secretly require almost zero effort. We love that around here.
The cake mix gives them a perfectly soft and chewy texture somewhere between a blondie and a fudgy brownie, while the strawberry glaze adds an extra punch of fruity sweetness on top. They’re bright, pretty, and perfect for baby showers, Valentine’s Day, spring parties, bake sales, or honestly just because you want something pink and delicious.
Also? No mixer required. Just a bowl and a spoon.

Ingredients You’ll Need
Brownies
- Strawberry cake mix
- Eggs
- Salted butter
Glaze
- Milk
- Powdered sugar
- Strawberry preserves
Step By Step Directions
Preheat your oven and prepare a baking dish, letting your parchment hang over the sides makes it easy to lift the brownies out later.
In a large bowl, stir together the strawberry cake mix, eggs, and melted butter until fully combined. The batter will be thick. Very thick. That’s normal.
Spread the batter evenly into the prepared pan and bake until set and slightly golden around the edges.
Allow the brownies to cool completely before adding the glaze.
To make the glaze, whisk together the powdered sugar, strawberry preserves, and milk until smooth. Spread the glaze over the cooled brownies, then let it set before slicing.

Tips & Tricks
- Don’t overbake these. You want them soft and chewy, not dry and cakey.
- Lining the pan with parchment paper is absolutely worth it for easy removal and cleaner slices.
- If your glaze feels too thick, add a tiny splash of milk. Too thin? Add a little extra powdered sugar.
- For cleaner cuts, chill the brownies for about 20 minutes after glazing.
- You can also top these with sprinkles, freeze dried strawberries, or white chocolate drizzle if you’re feeling fancy.

Storage
Store strawberry brownies in an airtight container at room temperature or in the refrigerator for 3 to 4 days.
If you refrigerate them, let them sit out for a few minutes before eating so they soften back up a bit.

Final Thoughts
These strawberry brownies are proof that cake mix desserts can still feel homemade and fun. They’re sweet, chewy, colorful, and dangerously easy to make.
Which is probably why they disappear so fast around here.
