How do you make roasted red pepper tortellini? (step-by-step directions)

First, add peppers, onion, and garlic to a baking sheet. Drizzle with oil and sprinkle liberally with salt and pepper. Roast on the center rack of a preheated oven.

Next, while vegetables are roasting, prepare tortellini per package directions. Reserve some pasta water, then drain and set aside.

Then, add roasted vegetables to a blender, and blend until smooth, adding pasta water as desired until you reach your desired consistency.

Finally, toss pasta with sauce, and garnish with fresh parsley!
