Caramel Stuffed Brownie Ingredients
- Brownie batter – Prepared. You can use a box mix (I am partial to Ghirardelli Double Chocolate Brownie Mix) or make your own from scratch (this Cosmic brownie recipe has a delicious browne base).
- Caramel (dulce de leche) – Make your own caramel using sweetened condensed milk, or you can buy it canned at the grocery store.
How do you make caramel stuffed brownies? (step-by-step)
⭐ First, divide prepared brownie batter in two equal parts. Pour one half into a parchment lined baking dish.
⭐ Then, pour caramel sauce over top and spread evenly.
⭐ Next, spread the remaining brown mix evenly over top of the caramel sauce.
⭐ Finally, bake according to brownie recipe directions, checking for doneness with a toothpick. Chill before cutting.

Can you make caramel brownies ahead of time?
You can make the brownies a day or two in advance. Store covered in a cool dry place, or in the refrigerator if longer.
Can I use canned caramel?
If you want to prep these faster you can use canned caramel (dulce de leche). The kind I recommend is found near the sweetened condensed milk at the grocery store.
Leftovers and storage
How long do caramel stuffed brownies last?
Leftovers will last a day or two kept at room temp in a sealed container or 3 – 4 days in the refrigerator.
Can you freeze the brownies?
Absolutely. Allow the brownies to cool, then slice and place in a freezer-safe container with parchment paper in-between to keep them from sticking.
Thaw overnight in the refrigerator or on the counter. Add icing and sprinkles after thawing.

Ingredients

- 8 ounces caramelized sweetened condensed milk
Instructions
- Divide prepared brownie batter in two equal parts. Pour one half into a 8x8 parchment lined baking dish.
- Pour caramel sauce over top and spread evenly.
- Spread the remaining brown mix evenly over top of the caramel sauce. (I find it is easiest to drop small amounts of mix at a time and spread it gently with the back of a spoon.)
- Bake according to brownie recipe directions, checking for doneness with a toothpick.
- Chill , then cut and serve. (Try using a plastic knife to make clean cuts!).

You could probably stick the bottom portion in the freezer for a couple minutes to make it semi-solid in order to spread the top layer easier. But then again… that means more wait time!

I baked the first batch of brownie mixture for 15 minutes to help with the caramel spreading process. Then when the caramel was ready I spread it over and put it in the fridge to cool before putting second batch of brownie mixture on top! Yes, very time consuming but worth the wait! Delicious recipe!!

I gotta admit when you said it was a pain in the rear recipe, I thought it would be a Cook's Illustrated use every bowl in the cabinet type recipe.
Honestly, if the two ingredients are a box of brownie mix and a can of condensed milk and the only hard part is spreading a layer of brownie mix this is a level 2 difficulty on a scale of 10.
