- Diced tomatoes – We used canned and drained, but fresh is great too if you prefer.
- Sloppy joe sauce – We used Manwich original sloppy joe sauce.
- Shredded cheddar cheese – Mexican blend is great too or pepper jack if you want a little kick.
How do you make a sloppy joe casserole? (Step-by-step)
⭐ First, mix together sloppy joe sauce, ground beef, noodles, tomatoes, and cheese.
⭐ Next, pour mixture into a casserole dish and top with remaining cheese.
⭐ Finally, bake until cheese is melted and bubbly.
Preparation
Can the casserole be made ahead of time?
You can put this together about a day in advance. It’s not required, but if possible, keep the components separate until immediately before baking for best results. Store uncooked casserole (or ingredients) in the refrigerator until ready to bake.
Can it be made gluten free?
To make gluten free sloppy joe casserole, swap the egg noodles for gluten free noodles. Alternatively, swap them for 6- 8 cups cooked rice.
Can it be made vegetarian?
Yes, swap the ground beef for 2 cans of your favorite vegetables or beans. I’m a big fan of mixed vegetables.
Fun variations
🟢 Stir in some hot sauce or pickled jalapenos and top with pepper jack cheese for a spicy version.
🟢 Swap the noodles for 6 – 8 cups cooked rice.
🟢 Add a can of mixed vegetables or black beans for added nutrition.
🟢 Top with canned biscuits or crescent rolls.
Storage and leftovers
How long does sloppy joe casserole last?
It will last 3 – 4 days when kept in a covered container in the refrigerator. If refrigerating immediately after baking, allow it to cool a few minutes first so as not to significantly raise the temperature of your fridge.
How do you reheat the leftovers?
Leftovers can be reheated in an oven safe dish at 350F for 15 – 30 minutes until heated through. Alternatively, individual portions can be reheated in a microwave in 30 – 60 second increments on high power.
Can you freeze the casserole?
You can freeze sloppy joe casserole either before or after baking. In both cases you’ll want to cover the dish tightly before storing in the freezer. If freezing after baking or if freezing leftovers, make sure you allow it to cool a few minutes first so as not to significantly raise the temperature of your freezer.
For best results, thaw overnight in the refrigerator.
Can it be cooked from frozen?
If you are using a dish that can go from freezer to oven, this can be cooked from frozen. You will want to add about 45 – 60 minutes of time to the total cook time.

Suggested tools
- Casserole dish with lid – I love a casserole dish with a lid so I don’t have to worry about fitting the top with foil or saran wrap. One that can go from freezer to oven is a major bonus too.
- Cheese grater – Freshly grated cheese melts so much better than pre-shredded. And cheese by the block is cheaper too!
